Well, without Chaimen, there would be no Basterma! I LOVE Basterma...It is so delicious. A real delicacy. Sliced very, very thin and eaten with The wonderful Armenian bread-Lavash. Can you tell I like Armenian food?? I can't help it-It's in my blood. Thanks to my Aunt Sophie!

Yield 1/2 cup

Number Of Ingredients 7

3 tablespoons paprika
1/2 tablespoon salt
1/2 tablespoon black pepper
1/2 tablespoon kimion (cumin, In Middle East Shops)
1/4 tablespoon cayenne pepper
1/4 tablespoon allspice
3 crushed garlic cloves

Steps:

  • Combine all ingredients.
  • Add a enough water, a little at a time, to make.
  • the mixture as thick as waffle dough.
  • Blend well to avoid lumps.
  • This mixture may be kept in fridge for several weeks.
  • Eat by dipping bread morsels into the dish of Chaimen.
  • Use Chaimen to make Basterma, The dried Armenian Jerky!

Methi Chaman is a paneer ( Indian cottage cheese) dish with fenugreek leaves and spinach gravy. Fenugreek leaves and spinach leaves are Methi chaman is a superb paneer (Indian cheese) dish combined with fenugreek and spinach greens gravy.

Steps:

  • Wash and Boil Methi and palak and blend it to a coarse paste. Take a pan add mustard oil, garam masala spices, cumin seeds, finely chopped onion, cook till onions are golden brown colour then add garlic crushed, turmeric, butter, ginger garlic pasted, green chillies, saute it. Now add salt, the paste of methi and palak, sugar, mix well then add coriander powder, ginger powder cook till oil oozes out, cook in a very slow flame. After methi has cooked now add water as needed, cream, mix well then add paneer sliced, cook for 3-4 minutes. At last, garnish with chopped coriander leaves and serve with roti, pulka.
