CELERY SALAD WITH BLUE CHEESE | RACHAEL RAY IN SEASON

Number Of Ingredients 7

1 tablespoon apple cider vinegar
1 teaspoon dijon mustard
Salt and pepper
¼ cup EVOO
1 bunch celery with leaves, ribs sliced 1/4 inch thick, leaves reserved
¾ cup walnuts, coarsely chopped
¾ cup crumbled blue cheese

Steps:

  • In a small bowl, combine the vinegar, mustard and 1/4 tsp. each salt and pepper. Whisk in the EVOO.
  • In a large bowl, combine the celery, 1 1/2 cups celery leaves, the walnuts and blue cheese. Add the dressing and toss to coat.

2 tbsp. fresh lemon juice
1 tbsp. honey
1 small celery root, peeled and cut into matchsticks
1 green apple, cored and cut into matchsticks
½ cup pomegranate seeds
½ cup toasted pine nuts
¾ cup grated Parmesan
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • In large bowl, whisk first 4 ingredients; season dressing. Toss dressing with celery root, fruit, pine nuts, and half of cheese; season. Top with parsley and remaining cheese.

  • Serves: 4 as an appetizerPlace the calamari in a bowl or gallon size resealable bag with milk and half of the sliced lemon. If using buttermilk, do not use lemon. Let soak for 20-30 minutes. Drain and pat dry on a stack of paper towels. Preheat oil in a Dutch oven or deep metal pot over medium-high heat to 350-360 degrees. While the oil is heating, in a medium mixing bowl, toss together the fennel and fronds, celery and leaves, chopped parsley tops and dress with lemon juice, EVOO, salt and pepper. Set aside.In a medium to large size mixing bowl add the flour and the beer or seltzer and stir until just combined, but not over-mixed.
