I saw this recipe on Copykat.com. Haven't tried it, but since I love Caesar salad and I love any kind of chicken, thought it looked good! *Prep time includes marinating chicken.

4 boneless skinless chicken breasts
2 tablespoons olive oil
2 1/2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
3/4 teaspoon garlic salt
1/8 teaspoon pepper
2/3 cup finely crushed seasoned croutons
1/3 cup grated parmesan cheese
8 romaine lettuce leaves

Steps:

  • In a zip lock plastic bag, make marinade by mixing together olive oil, lemon juice, worcestershire sauce, mustard, garlic salt and pepper.
  • Add chicken, seal bag and shake to mix thoroughly and coat chicken.
  • Refrigerate at least 1/2 hour.
  • On shallow plate, mix crushed croutons and parmesan.
  • Remove chicken from marinade and drain; reserve marinade.
  • Add chicken, one piece at a time, to crouton mixture, dredging to coat.
  • Place chicken on greased shallow baking pan; drizzle reserved marinade over chicken Bake at 400 degrees for about 18 min.
  • or until fork can be inserted in chicken with ease.
  • Arrange lettuce leaves on serving plate, place chicken on lettuce leaves and garnish with lemon slices.

This crispy chicken has a mild tangy Caesar flavor and is great served with a side of pasta or a green salad.

1/4 cup grated Parmesan cheese
1/4 cup Progresso™ Panko Italian style crispy bread crumbs
1 tablespoon butter, melted
4 boneless skinless chicken breasts (about 1 1/2 lb)
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons refrigerated creamy Caesar dressing, plus more for serving
Chopped Italian (flat leaf) parsley, if desired

Steps:

  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In small bowl, mix Parmesan cheese, bread crumbs and melted butter, mixing well.
  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2-inch thick. Season both sides of chicken with garlic powder, salt and pepper.
  • Place chicken on pan; brush tops of chicken with Caesar dressing. Sprinkle with bread crumb mixture, pressing slightly to stick. Bake 10 to 14 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Garnish with chopped parsley.
