The recipe is adapted from Wales.com, an informational website run by the Welsh government. Although made with lamb shanks, you can adjust the recipe by using seafood, fish, or other types of meat.

Number Of Ingredients 11

6 small lamb shanks
1.2L water
225 gr potatoes, peeled and diced
225 gr swede, peeled and diced
225 gr onion, peeled and chopped
225 gr carrots, peeled and diced
225 gr leek, cleaned and sliced thin
a bunch of herbs (bay, thyme, rosemary and parsley)
½ small Savoy cabbage
2 tbsp vegetable oil
salt and pepper

Steps:

  • Season the lamb shanks and heat the vegetable oil in a large pan.
  • Sauté the lamb shanks and onions until browned — if necessary, do this in batches.
  • Next, pour in the water and add the bunch of herbs. Bring to a boil, then cover and simmer for 40 minutes.
  • At this point, add all the vegetables besides the cabbage. Bring to a boil once again, then simmer for another 40 minutes.
  • Last, add the cabbage shreds and cook briefly, for about 5 minutes. When done, serve.
