Another wonderful cauliflower casserole from the box; photo from internet very similar to recipe. This one is great for breakfast or lunch too. Although I have not made this yet- my niece and her husband love it.

1/2 medium head of cauliflower
2 large eggs, hard boiled, peeled and chopped
1 1/2 tablespoon(s) flour
1/2 teaspoon(s) curry powder, or less to taste
1/3 cup(s) cream or 1/2 and 1/2 cream
1 tablespoon(s) heaping butter
1/2 teaspoon(s) dried thyme
2/3 cup(s) grated raclette cheese(like swiss without the holes)
4 slice(s) applewood thick sliced bacon, fried crispy and chopped up

Steps:

  • Boil cauliflower in slated eater about 8 minutes, Drain. Arrange the cauliflower in a buttered or sprayed shallow over proof casserole dish. Scatter the chopped eggs evenly over top. Set aside.
  • Put the flour, curry powder, butter and cream in a saucepan. Bring to boil slowly, stirring until thickened and smooth. Stir in thyme, seasoning, and allow sauce to simmer for a few minutes.
  • Remove saucepan from the heat, stir in 1/3 of the cheese. Pour the sauce over the cauliflower, and scatter remaining cheese and bacon over top. Brown cheese under broiler until golden brown. Watch carefully as you can see it burns easily.

1.00 cauliflower head, broken into florets
1.00 onion finely chopped
oil
6.00 button mushrooms sliced
2.00 tomatoes peeled an finely chopped
250.00 ml peas fresh
410.00 g sweetcorn tinned, drained
50.00 ml margarine
100.00 ml flour cake
400.00 ml milk
2.00 ml fresh basil
2.00 ml oregano
salt and freshly ground black pepper to taste
100.00 g cheddar cheese grated
50.00 ml breadcrumbs

Steps:

  • Preheat the oven to 180 ºC (350 ºF). Lightly grease an ovenproof dish with margerine.Cook the cauliflower in a little boiling salted water until just soft. Drain well and set aside.Sauté the onion in a little oil until soft. Add the mushrooms and stir-fry until pale brown.Add the tomatoes and simmer until they are soft.Add the peas and corn and heat through.Remove from the heat and stir in the milk. Return the saucepan to the stove and add the seasonings.Stir until the sauce comes to the boil and thickens. Add half the white sauce to the tomato mixture and stir well.Turn the sauce into the ovenproof dish and arrange the cauliflower florets on top.Pour the remaining white sauce over the cauliflower and sprinkle with Cheddar cheese and breadcrumbs.Bake for 20 to 30 minutes or until the cheese has melted and the breadcrumbs have turned pale brown.
