½ head cauliflower, cut into florets
1 cup grated Cheddar cheese
¼ cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon curry powder

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 2 to 6 minutes.
  • Transfer cauliflower to a bowl and add Cheddar cheese, mayonnaise, mustard, and curry powder; stir to combine.

This recipe comes from kraftfoods.com. I find cauliflower a rather bland vegetable; however, the addition of curry powder really perks it up.

1/4 cup olive oil
2 teaspoons curry powder
2 teaspoons sugar
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups cauliflower florets, washed
2 tablespoons slivered almonds

Steps:

  • Preheat oven to 400 degrees.
  • Mix the olive oil, curry powder, sugar, lemon juice, salt and pepper in a small mixing bowl.
  • Place the washed and well drained cauliflower florets in a 13 x 9 inch baking dish; pour the oil mixture over the florets and toss gently.
  • Cover with foil and bake 15 minutes; remove from oven and stir in almonds mixing lightly.
  • Return to oven and bake uncovered for an additional 10 to 15 minutes or until cauliflower is browned and almonds are toasted.
