Steps:
- Place riced cauliflower in a microwave-safe bowl. Microwave, covered, for 3 to 4 minutes. Transfer to a cheesecloth-lined strainer and allow to cool for 15 minutes. Squeeze moisture out of the cooled riced cauliflower.
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Combine riced cauliflower, egg, ranch mix, and cayenne pepper in a bowl and mix well. Stir in Parmesan cheese until incorporated.
- Drop mixture with a small cookie scoop onto the prepared cookie sheet and flatten with a small hand rolling pin, a cup, or your hand to approximately 1/16-inch thickness. The thinner the dough, the crispier the cracker.
- Bake crackers in the preheated oven for 10 minutes, flip, and bake for an additional 10 minutes. Cool on a wire rack.

Steps:
- Pre-heat oven to 350° F.
- Place all of the dry ingredients into a large mixing bowl.
- Melt the ghee and add the ghee, water and eggs to the bowl and mix thoroughly.
- Set aside for 10 minutes.
- Line two large or four small baking trays with baking paper.
- Divide dough into two or four, depending on your trays.
- Roll dough out in-between two sheets of baking paper until about 1/8 inch thick.
- Place sheet with dough onto tray and using a sharp knife cut into squares (I used acookie cutter to make fancy circles but it is time consuming and generates abit of wasted dough).
- Repeat until all dough is on trays, sprinkle with sea salt and then bake for 35minutes.
- Remove from oven, turn oven off and carefully score the lines again to create individual crackers.
- Return to the oven and leave until cool.
- Store in an airtight container for up to 1 week.

- Preheat oven to 375°. Line a medium baking sheet with parchment paper and grease well with cooking spray. Place riced cauliflower in a medium microwave-safe bowl and microwave on high for 1 minute. Stir cauliflower, then microwave on high for 1 minute more. Transfer cauliflower to a clean kitchen towel and squeeze out as much moisture as you can. Return cauliflower to bowl. Add Parmesan and ranch seasoning to cauliflower and stir to combine. Season with pepper. Using a small cookie scoop (or a heaping tablespoon), place cauliflower mixture on prepared baking sheet and use the back of a spoon to flatten into a circle. Leave 1" space between each cracker. Bake for 12 minutes, or until golden at the edges. Let cool completely on baking sheet before serving.
