CORN TORTILLAS | LODGE CAST IRON

In an ideal world, we'd make tortillas from fresh masa every time.

Number Of Ingredients 4

1 ¼ cups of masa harina
1 cup of hot water
¼ teaspoon of sea salt
½ to 1 teaspoon of vegetable oil

Steps:

  • Combine the masa harina, water, and salt in a medium bowl and knead into a smooth ball. Cover the bowl with plastic wrap and let sit for 30 minutes to allow the masa to completely absorb the water.
  • Break off golf ball–size pieces of dough, about 40g each. (Use larger pieces if you want to make bigger tortillas.) Roll each piece into a smooth ball. If using a tortilla press, place one piece of plastic wrap on the bottom of the press, set the dough ball on it, and then place another piece of plastic wrap on top of the dough before pressing. Alternatively, choose a plate that has a high enough ridge on its underside to make the tortilla the thickness you like when a dough ball is placed directly under the plate and the plate is pressed down to rest on the work surface. Or you can simply press tortillas with the bottom of a pan or even a book. Stack the pressed tortillas on a plate until you’re ready to cook them.
  • Heat the oil in a cast-iron skillet over medium-high heat and cook the tortillas, one or two at a time, on each side until browned in a few spots and cooked through, 3 to 4 minutes total, depending on the thickness of the tortillas.
  • To store cooked tortillas, wrap in aluminum foil and set aside until completely cool. Place the foil packet in a resealable plastic bag and refrigerate for up to 3 days.

Chicken tortilla soup is a favorite on restaurant menus everywhere. Now you can make it right at home!

Number Of Ingredients 20

4, of 6-inch corn tortillas, cut into thin strips
½ cup of vegetable oil
1 of rotisserie chicken, pulled
2 tablespoons of olive oil
1 of white onion, diced
6 of cloves garlic, minced
1 of jalapeno, seeded and diced (optional)
1 tablespoon of chili powder
2 teaspoons of cumin
1 teaspoon of salt
1, of 14.5-ounce can fire-roasted diced tomatoes
1 cup of fire-roasted corn
3 cups of chicken broth
1½ tablespoons of lime juice
of salt and pepper to taste
of crispy tortilla strips
of lime wedges
of avocado, sliced or cubed
of cilantro, roughly chopped
of queso fresco, crumbled

Steps:

  • In a medium skillet, heat ½ cup of oil over medium-high heat for 3-5 minutes.
  • Fry tortilla strips for 2-3 minutes until crispy. Set aside on a paper towel-lined plate. 
  • Preheat a cast iron deep skillet or dutch oven over medium-high heat for 3-5 minutes.
  • Add olive oil and onion and sauté for 5–7 minutes. Add garlic and jalapeño and continue to cook for 3 minutes. 
  • Next, add shredded chicken and coat with chili powder, cumin, and salt. Stir in chicken broth, tomatoes, and corn.
  • Bring to a boil and lower to a simmer for 30 minutes 
  • Stir in lime juice.  
  • Garnish with crispy tortilla strips, queso fresco, avocado, cilantro, and lime.
