Baked apples with a cinnamon nutmeg stuffing are the perfect way to end a fall camp meal.

Prep Time 10 minutes

Cook Time 50 minutes

Number Of Ingredients 8

6 of baking apples
½ cup of raisins
½ cup of slivered almonds
½ teaspoon of cinnamon
½ teaspoon of nutmeg
2 ¼ cup of water
6 of ounces orange juice concentrate, thawed
3 of tablespoons honey

Steps:

  • Wash and dry apples. Remove core, but do not cut all the way through the bottom of the apple. 
  • In a small bowl, combine raisins, almonds, cinnamon and nutmeg. Divide filling into 6 equal portions. Using fingers, stuff apples with filling. 
  • In a small bowl, combine water, orange juice concentrate and honey. Mix until well blended. 
  • Place apples in 12 Inch Dutch Oven. Carefully pour orange juice mixture over apples.*
  • Bake between 350-450 degrees Fahrenheit  for 50 minutes, or until apples are tender. Spoon excess sauce over apples before serving.

Number Of Ingredients 8

½ cup butter
1 cup brown sugar
5 Granny Smith apples -- peeled, cored, quartered, and thinly sliced
3 (9 inch) refrigerated prerolled pie crusts
1 cup white sugar, divided
2 teaspoons ground cinnamon, divided
¼ cup white sugar
1 tablespoon butter, cut into small chunks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place 1/2 cup butter into a heavy cast iron skillet, and melt butter in the oven. Remove skillet and sprinkle with brown sugar; return to oven to heat while you prepare the apples.
  • Remove skillet, and place 1 refrigerated pie crust on top of the brown sugar. Top the pie crust with half the sliced apples. Sprinkle apples with 1/2 cup of sugar and 1 teaspoon of cinnamon; place a second pie crust over the apples; top the second crust with the remaining apples, and sprinkle with 1/2 cup sugar and 1 teaspoon cinnamon. Top with the third crust; sprinkle the top crust with 1/4 cup sugar, and dot with 1 tablespoon of butter. Cut 4 slits into the top crust for steam.
  • Bake in the preheated oven until the apples are tender and the crust is golden brown, about 45 minutes. Serve warm.

  • Preheat oven to 375 F. For the apple topping: In a 9 to 10-inch skillet, melt the butter over low heat. Add  sugar to the pan and stir around, then place apple slices, cut side down, in the pan. Don’t pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter, about 10 minutes.  In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Mix in the vanilla and eggs. Add the sour cream and mix well. In a bowl, mix the flour, baking powder, salt, and cinnamon. Stir together then gradually add the flour mixture into the creamed butter mixture until just combined. Gently stir in the chopped apple. Remove the skillet from the heat. Spoon the batter over the top, then spread gently so the batter is evenly distributed. Place on a sheet tray lined with foil and bake for 25 -30 minutes, or until cake is golden brown and bubbly. Allow the cake to sit in skillet for five minutes, then invert onto a serving plate. Don’t worry if some of the topping isn’t perfect---it’ll taste perfect! Serve warm with vanilla ice cream.

Here I use pink peppercorns, which have a more delicate floral flavor. There’s no shame in embracing the color motif (what’s life without whimsy?) so in addition to those Pink Lady apples I also use Himalayan pink salt, but feel free to swap in another sweet-tart fall apple variety and your favorite fancy salt.
