Crème de cassis is most well-known as being an ingredient in Kir and Kir Royale cocktails, but if you're feeling brave, try it on its own as an after-dinner drink.

- Pour Prosecco into an ice-filled large wine or rocks glass. Add crème de cassis and top off with club soda. Gently stir together; garnish with blackberries.

Steps:
- Crush the blackcurrants in a bowl with the back of a fork. Stir in the red wine, crushing the fruit again. Cover and leave at room temperature for 24 hours, then strain through a muslin-lined sieve into a pan.
- Stir in the caster sugar and heat gently until dissolved. Bring up to a tremble of a simmer and cook for 2 hours until reduced to 900ml syrup. Cool, then stir in the eau de vie or brandy.
- Pour into sterilised bottles and seal. Leave for 2 days before using. Use within 1 year.

- This pancake recipe makes a lovely fruity treat for breakfast or as a dessert served with vanilla ice cream. Method: Place the eggs into a large bowl and lightly beat. Add the sifted flour to make a thick paste. Gradually add the milk and mix to make a smooth batter. Add the pinch of salt. Grease a hot Weber Griddle with butter. Take 2 tablespoons of the batter mixture and pour onto the griddle. Use the back of a spoon to create a round shape, cook for half a minute on each side until golden and bubbling. Meanwhile add the frozen mixed berries, Crème de Cassis and sugar to a saucepan and simmer on a low heat for 8-10 minutes until the juices have thickened and are slightly syrupy. Add the squeeze of lemon and you're ready to serve. Add a spoonful of the fruit mixture and a scoop of ice cream to the centre of each pancake, fold and serve.
