Creamier than dairy milk and more delicious than ambrosia, cashew cream will become your new go-to for everything from coffee to ice cream to milkshakes.

Yield Makes 2 cups

Number Of Ingredients 3

4 cups Water
1 cup Cashews
2 1/2 cups Water

Steps:

  • Add the cashews and water to a large bowl and soak at least 4 hours and up to overnight (refrigerate if you are doing a longer soak).
  • Drain the nuts in a fine mesh strainer and rinse until the water runs clear. Add 2 cups water and nuts to a blender and blend for 1-2 minutes or until completely smooth.
  • Add sweetener or seasoning to taste (e.g., sugar, cinnamon, salt, maple syrup), and continue to blend for another 15 seconds. Pass the mixture through a very clean towel and drain, squeezing to extract all the liquid.
  • Place in the refrigerator and use within 3-4 days, shaking before each use (separation is natural).
