Buttermilk Pralines Recipe: How to Make It image

Years ago, I received this candy recipe from a dear friend in Texas. The creamy texture and sumptuous sweetness has earned me rave reviews each time I've made it.

Yield 1-1/2 pounds.

Number Of Ingredients 6

2 cups sugar
1 cup buttermilk
1 teaspoon baking soda
1 tablespoon butter
1-1/2 cups pecan halves
1 teaspoon vanilla extract

Steps:

  • In a large heavy saucepan, combine the sugar, buttermilk and baking soda. Cook and stir over medium heat until a candy thermometer reads 210°. , Stir in butter and pecans; cook until thermometer reads 230°. Remove from the heat; add vanilla. Beat with a wooden spoon until mixture loses its gloss and begins to set, about 8 minutes. Quickly drop by teaspoonfuls onto foil-lined baking sheets. Cool.

Traditional cut-out gingerbread cookies are spiced with grated orange peel for a subtle new taste.

2/3 cup light molasses
1/3 cup firmly packed brown sugar
1/3 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
2 teaspoons freshly grated orange zest
2 3/4 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
4 ounces white and/or dark chocolate, chopped, melted

Steps:

  • Combine molasses, brown sugar, butter, egg and orange zest in bowl. Beat at medium speed until smooth and creamy. Add all remaining ingredients except chocolate; beat at low speed until well mixed. Divide dough in half; wrap each half in plastic food wrap. Refrigerate 2 hours or until firm.
  • Heat oven to 375°F.
  • Roll one-half of dough (keeping remaining half refrigerated) on well-floured surface to 1/4-inch thickness. Cut with 3- to 4-inch cookie cutters. Place, 1 inch apart, onto greased cookie sheets. Bake 6-8 minutes or until no indentation remains when touched. Cool completely.
  • Dip cooled cookies in melted chocolate. Place onto waxed paper to set.

  • In a large heavy saucepan, combine sugar, water and corn syrup. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes. Uncover and cook over medium-high heat, without stirring, until a candy thermometer reads 310° (hard-crack stage). Remove from the heat; stir in oil and food coloring, keeping face away from the mixture as the odor with be very strong. , Immediately pour onto a greased baking sheet. Quickly spread into a 13-in. x 9-in. rectangle. Using a sharp knife, score into 1-in. squares. Re-cut rectangle along scored lines until candy is cut into squares. Let stand at room temperature until dry. Separate into squares, using a knife if necessary.

  • In a microwave, microwave the chocolate, 1/4 cup water and butter until the chocolate and butter are melted; stir until smooth. Cool for 10 minutes. , In a small heavy saucepan, whisk egg yolks, sugar and remaining water. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Remove from the heat; whisk in chocolate mixture. , Set saucepan in ice and stir until cooled, 5-10 minutes. Fold in whipped cream. Spoon into dessert dishes. Refrigerate 4 hours or overnight.
