La carne guisada es un plato tradicional de la cocina puertorriqueña, que se suele acompañar con arroz blanco o arroz guisado con frijoles. Desde pequeña he disfrutado comerlo y fue una de esas primeras recetas que aprendí a preparar a los 13 años para ayudar a mi mamá con la preparación de la cena. Es probable que conozcas este plato tradicional como estofado o guiso muy popular en nuestra cultura latina.

2 lb de carne de res, cortada en cubos pequeños
2 hojas de laurel
1 cebolla mediana, picada
3 dientes de ajo, picado
2 tazas de agua
6 papas medianas, cortadas a la mitad o en cubos
2 zanahorias cortadas, cortadas en cubos
1 cucharadita de sazonador con achiote
1 cucharadita de orégano, molido
1/4 taza de cilantro fresco
2 hojas de culantro, (opcional)
1/2 cucharadita de comino
Sal y pimienta, al gusto
3 cucharadas de pasta de tomate

Steps:

  • En una olla grande, pon la carne de res, el laurel, la cebolla y los ajos con 2 tazas de agua, o la cantidad necesaria para cubrir la carne. Cocina con la olla tapada, a fuego medio-alto por 2 horas o hasta que la carne esté tierna.
  • Añade las papas, las zanahorias, el sazonador, el orégano, el cilantro, el culantro, el comino, la sal, la pimienta y la pasta de tomate; cocina sin tapar a fuego medio-bajo, entre 20-25 minutos o hasta que las papas y las zanahorias estén blandas.
  • Sirve y ¡disfruta!

1 1/2 lbs stew meat
1 tablespoon olive oil
3 medium potatoes, quartered
1 sazon goya con culantro y achiote
1 tablespoon adobo seasoning
2 -3 carrots (optional)
6 manzanilla olives
1 teaspoon capers (alcaparrado)
1 large cooking spoon sofrito sauce
1 (8 ounce) can tomato sauce
1 teaspoon oregano, dried, crushed in hand
1 teaspoon cumin, ground
2 bay leaves
salt and pepper
3 cups water
4 small ears of corn (the small NIblets)

Steps:

  • Heat olive oil over medium high heat in deep pot.
  • Season meat with 1/2 tablespoon adobo.
  • Quickly brown meat.
  • Add water and cook for one hour at medium heat.
  • Add potatoes and remaining ingredients.
  • Cook another 30 minutes or until potatoes are tender and sauce has thickened a bit.
