A family favorite. It brings back memories of my grandpa in the kitchen. I've even taught my 9 year old daughter how to cook this.

Number Of Ingredients 18

4 tablespoon(s) olive oil, extra virgin
2 cup(s) onion, chopped
2 cup(s) green bell pepper, chopped
6 clove(s) garlic, mashed
2 pound(s) lean stewing beef
small amount of white flour for dredging meat
2 teaspoon(s) ground cumin
2 teaspoon(s) dried oregano
1 teaspoon(s) salt
1/2 teaspoon(s) ground black pepper
1 cup(s) red cooking wine
15 ounce(s) tomato sauce
3 tablespoon(s) white wine vinegar
1/4 cup(s) spanish olives (pimiento stuffed)
2 - bay leaves
1 1/2 to 2 cup(s) water or beef stock
4 to 5 - potatoes, peeled & cut into large chunks
- salt and pepper, to taste

Steps:

  • Heat oil over medium heat in a large sauté pan. Add onion and green pepper; cook and stir until transparent. Add garlic and sauté for an additional minute.
  • Lightly salt and pepper the meat cubes and dredge in flour. Add the meat to the pan and brown on all sides. Add the cumin, oregano, salt and pepper and cook for 3 minutes. Add wine, tomato sauce, vinegar, olives and bay leaves. Add just enough water or beef stock to cover the meat. Bring to a boil, reduce heat to low, cover and simmer until fork-tender, about 1-2 hours. Add more water if the stew becomes too thick.
  • Add potatoes and cook, covered, until potatoes are tender. Season with salt and pepper to taste. Serve hot with rice.

CARNE CON PAPAS | JUST A PINCH RECIPES
Carne con Papas (Cuban Beef with Potatoes) is a traditional Cuban recipe. Most families have their own favorite recipe which can vary in which spices and herbs individuals cooks prefer to use. But the basic recipe features cooked beef and tender potatoes in a tasty broth that's bursting with flavor. It can be served by itself as a stew, or if you prefer you can serve it over cooked white rice for a fuller, more rounded meal. Be sure to serve it with some fresh baked Cuban Bread or fresh Cuban Medianoche Bread rolls to soak up the pan sauce.
