- Marinate the roast: Combine brown sugar, ginger, garlic, 3/4 teaspoon pepper, allspice, cloves, bay leaves, rum, and lime juice in a medium baking dish. Add the pork roast, cover, and marinate in refrigerator for at least 4 hours or overnight, turning meat occasionally to be sure it is thoroughly marinated. Roast the pork: Preheat oven to 450 degrees F. Remove roast from the marinade, pat dry, and sprinkle with the salt and remaining pepper. Reserve the marinating liquid.
