- Thaw fish, if frozen. For salsa, in a medium bowl combine mango, tomato, cucumber, cilantro, green onion, jalapeno pepper, and lime juice. Let stand at room temperature until ready to serve.
- Rinse fish; pat dry with paper towels. Sprinkle both sides of fish with jerk seasoning. Place fish on the greased unheated rack of a broiler pan. Broil about 4 inches from the heat for 8 to 12 minutes or until fish flakes easily when tested with a fork, turning once.
- Meanwhile, heat a large skillet over medium-high heat. Cook tortillas, one at a time, for 30 to 60 seconds or until light brown, turning once.
- Using a fork, flake fish into bite-size pieces. Top each tortilla with spinach, fish, and salsa; fold gently in half. Makes 2 servings.

Steps:
- Place tuna steaks in a large glass pan.
- Squeeze the juice of 1 lime evenly over tuna.
- Sprinkle seasoning evenly over both sides of fish.
- Let it marinate for up to 30 minutes.
- While the fish is marinating, make the Guacamole, and the slaw.
- For the Guacamole:
- Slice 2 Avocados in half and remove pit.
- Scoop Avocado into small bowl and mash until your desired texture.
- Add greek yogurt and mix well.
- Squeeze juice of lime into mixture.
- Add garlic, cilantro, basil, salt and pepper.
- Mix well.
- For the Fish Tacos:
- Once fish is marinated, chop tuna steaks into 1 inch pieces.
- In large frying pan over medium high heat add coconut oil until melted over bottom of pan.
- Add tuna and fry evenly until slightly pink in center (about 5-8 minutes).
- Add cooked tuna to corn tortillas, top with Guacamole, slaw, and toppings of your choice
- Enjoy!

Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

- Heat olive oil in a skillet over medium heat. Dip tilapia fillets into the egg mixture, then press gently into the panko crumb mixture to coat both sides of fillets.
