Dinner ready in 25 minutes! Enjoy this hearty beef liver cooked in a skillet and topped with crispy bacon.

1 lb. beef liver
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
4 slices bacon
2 medium onions, sliced

Steps:

  • Cut liver into serving-sized pieces. In shallow bowl, combine flour, salt and pepper; mix well. Coat liver with flour mixture.
  • In large skillet, cook bacon over medium heat until crisp. Remove bacon; drain on paper towel, reserving drippings in skillet.
  • Add liver and onions to skillet; cook 2 to 3 minutes on each side or until thoroughly cooked. Serve topped with crisp bacon.

1 onion, sliced
1/2 cup margarine
salt, to-taste
black pepper, to-taste

Steps:

  • Layer potatoes and onions in a microwave proof, coverd dish.
  • Salt and pepper to taste.
  • Add butter on top.
  • Microwave covered for 10 to 15 minutes until potatoes are fork tender.
