Number Of Ingredients 15

3 tablespoons extra-virgin olive oil
5 tablespoons unsalted butter
1 garlic clove, minced
2 large yellow onions, thinly sliced
1 can (28 ounces) whole San Marzano tomatoes (drain 3/4 of liquid and crush tomatoes by hand)
1/2 cup water
1 teaspoon granulated sugar
1 teaspoon salt
1 tablespoon salt, plus more to taste
2 1/2 tablespoons vodka
1 cup heavy cream
2 tablespoons Calabrian chili paste (can substitute with red chili flakes)
2 tablespoons unsalted butter
8 ounces rigatoni or pipette
Parmigiano-Reggiano, grated (optional)

Steps:

  • While onions are cooking, start on sauce. In a large pot or Dutch oven, heat olive oil on medium-low until warm, add in minced garlic clove and stir with a wooden spoon for 1 minute (being careful not to burn). You may add a few cranks of fresh black pepper if you like.
  • In a large frying pan, heat the butter over medium heat until melted and just starting to foam. Add in sliced onions, stir and season with salt. Add 1/2 cup water and turn heat down to low. Simmer for 15-20 minutes until onions are translucent and very soft but do not let them brown. Remove from heat and set aside.
  • Add in tomatoes, salt and sugar, turn heat up to medium-high and stir. Once simmering, add vodka to sauce and continue to stir for 1 minute.
  • Pour in heavy cream and Calabrian chilis, stir and again bring up to a simmer. Turn heat down to low and let simmer uncovered for 15 minutes, stirring occasionally.
  • Meanwhile, bring a large pot of salted water to a boil and cook pasta until al dente, drain but remember to reserve 1 cup of pasta water.
  • Add pasta to sauce, along with onion soubise (you may have some onions leftover depending you much you want in your sauce), 2 tablespoons of butter and 1/4 cup of pasta water to start. Turn heat up to high and stir until sauce comes together and binds to pasta (you can adjust consistency of sauce by adding more pasta water or thickening by adding a bit more butter or Parmigiano-Reggiano). Serve!

Copycat Carbone Spicy Rigatoni is essentially a slightly spicier and more involved version of vodka sauce. It's so good you make never make the original.

onion (about 2 medium), finely chopped

cloves garlic, minced

2 to 4 tbsp. crushed Calabrian chiles in oil, to taste

(6 oz.) can tomato paste

1

(14 oz.) can whole tomatoes

1 c.

heavy cream

Kosher salt

1 lb.

lumaconi or pipette pasta

1 1/2 c.

freshly grated Parmesan, plus more for serving

Steps:

  • In a large, heavy-bottom pot over medium heat, melt butter. Add onions and cook, stirring often, until golden brown and caramelized, 18 to 20 minutes. Add garlic and chiles, and cook until fragrant, about 2 minutes. Transfer about 2 tablespoons of the cooked onion mixture to a small bowl, and set aside. Add tomato paste to pot, and cook, stirring occasionally, until thickened slightly and darkened in color, 2 to 3 minutes. Pour in whole tomatoes along with their liquid, and bring to a simmer. Cook tomato mixture, breaking up tomatoes, until sauce has thickened and tomatoes have broken down, about 10 minutes. Remove from heat and stir in heavy cream until fully incorporated. Using an immersion blender or by carefully pouring into a traditional blender, blend sauce until smooth. Add 2 tablespoons of salt to a large pot of boiling water, and add pasta. Cook until al dente. Reserve about 1 1/2 cups of pasta water, then drain pasta.  Return sauce to a simmer over medium-low heat. Add ½ cup pasta water and Parmesan, and stir until incorporated. (If you desire a smoother sauce, add pasta water ¼ cup at a time until you have reached your desired consistency.) Season to taste with salt. Toss in reserved cooked onion mixture. Transfer cooked pasta to sauce, and toss until the pasta is heated through and fully coated.  Serve immediately with a light dusting of Parmesan.
