3 tablespoons butter or margarine
4 cups chopped sweet onions (4 large)
2 medium red apples, peeled and chopped (2 cups)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Chopped fresh parsley, if desired

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Cook onions in butter 10 minutes, stirring occasionally, until golden.
  • Stir in apples; cook 10 minutes, stirring occasionally, or until caramel colored. Remove from heat; stir in salt and pepper. Sprinkle with parsley. Serve warm.

6 tablespoons extra-virgin olive oil
4 Granny Smith apples, peeled, cored and cut into 6 wedges
2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt and freshly ground black pepper to taste

Steps:

  • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
  • To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.

The results were so delicious that my wife demanded I write down exactly what I had done so I could do it again. This chutney is the perfect balance of tart and sweet and is brimming over with rich, delicious flavor. I strongly suggest using a 12 to 14-inch stainless steel skillet with a lid if you have one. Around here, the raisins and caraway or celery seed are optional as the wife doesn't care for them as much as I do, but IMO, they only make it better. I hope you like this stuff as much as we do. Yield is more a guess than a certainty.

Preheat oven to 500°F. Generously grease an 18 x 13 inch pan or 2 smaller pans with oil. 4. Roll out dough, lightly stretching it to fit the pan. Transfer to the pan and pull to the edges. Create a small border by pinching the edges. Dimple the surface of the dough with your fingertips to create small ridges and valleys.  5. Distribute the onion mixture over the top. Add cheese, if using, and bake for 20-25 minutes until browned and bubbly.
