My delicious caramel in a can.

1 (14 ounce) can sweetened condensed milk
½ teaspoon vanilla extract

Steps:

  • Remove label from the can of condensed milk. Place unopened can in a 3 1/2- to 4 1/2-quart slow cooker. Pour water into the slow cooker until the can is completely covered with water. Put lid on the slow cooker.
  • Cook on High for 3 1/2 to 4 1/2 hours, making sure the can is always covered with water. Remove hot can with tongs; allow to cool until safe to handle, at least 25 minutes. Open can and pour contents into a lidded bowl. Stir in vanilla extract.

1 (14 ounce) can sweetened condensed milk (any size I had to enter something here)
water

Steps:

  • Unopened can of sweetened condensed milk with the paper taken off.
  • Place the unopened can in a crock-pot. Completely submerge the unopened can in water.
  • Cook on the crock-pot's lowest setting for 8 hours. If using sous vide set it for about 200°F.
  • Cool down in the fridge for at least 2 hours. Cooling the can is the key.
  • Open and viola, you have caramel!

  • In a medium saucepan over medium heat, add sugar and salt and cover with water. Bring to a simmer over medium heat, stirring every so often until sugar is dissolved, about 5 minutes. Increase heat to medium-high and cook until deeply golden, without stirring, 4 to 5 minutes more. (If you're using a candy thermometer, you want it to reach 350°). Once caramel is a deep copper color, turn off heat and immediately stir in cream and butter. Mixture will bubble up so be careful!  Let cool slightly in pan, then transfer to a container to cool completely. Store covered in the refrigerator for up to 1 month.
