Caramel plus white chocolate equals an ultra-rich ganache. Take care when pouring the hot cream into the caramelized sugar, as it will spatter; when adding the chocolate, stir constantly until melted and caramel is smooth. The caramel will keep for up to a month (or longer) in the refrigerator, and you will need to heat it in the microwave or by placing the jar in a pan of simmering water before serving, over ice cream, as a filling for layer cakes, or a sweet spread for shortbread or other cookies.

5 1/4 tablespoons heavy cream 30% fat minimum
4 3/4 tablespoons granulated sugar
2 7/16 tablespoons corn syrup glucose syrup, if available to you
salt
1 1/2 teaspoons butter
2 7/8 tablespoons white chocolate

Steps:

  • Heat the cream in a saucepan or in the microwave.
  • Heat a second empty saucepan. When it gets hot, pour the granulated sugar in it. Let it melt until it gets and amber color.
  • Drizzle the cream on the sugar, but be careful to watch for projections that can occur even though the cream is hot.
  • Mix and bring to a boil.
  • Add the corn syrup, the salt, and the butter.
  • Stir.
  • Chop the chocolate, and add to the caramel. Stir until melted.
  • Pour into a jar. Keep the caramel in the refrigerator.
  • In the refrigerator, it will harden, so do not hesitate to microwave the jar to obtain a more liquid consistency.

Filled with spices, buttermilk, and jam, this moist cake has been in the baking repertoire of my husband's family for over a century. Although this particular recipe hails from Bowling Green, Kentucky, I found many other recipes for jam cake that originated further south. At first glance, I mistakenly thought the jam was merely a filling between the cake layers but to my happy surprise, the jam is actually an ingredient in the batter, creating a lovely berry hue to the cake and an even better berry taste. This down-home cake traditionally calls for a sweet caramel frosting, but I opted for a decadent caramel chocolate ganache. Make the ganache before you make the cake as it needs about 3 hours to firm up at room temperature (and is so much better when not refrigerated).
