Marmite adds a bit of savouriness to this classic roast potatoes recipe and you only need one teaspoon. Serve these with a Sunday roast dinner for a change.

(5½lb) medium-size floury potatoes

Marmite

6 tbsp.

fat or olive oil

Steps:

  • Preheat oven to 190ºC (170ºC fan) mark 5. Peel the potatoes and cut into large even-sized chunks. Put into a large pan, cover with water and bring to the boil. Simmer for 12min.

    Meanwhile mix the marmite and fat/oil in a small bowl, then empty into a roasting tin large enough to fit the potatoes in a single layer. Put into the oven to heat (max 10min).

    Drain the potatoes well; leave to steam dry in the colander for 3min. Shake well to ruff up the edges (do this in batches if easier).

Sift over flour and bicarb and mix until smooth. Stir in the orange zest, carrots, sultanas and walnuts, if using, until combined.   Scrape into prepared tin, smoothing to level. Bake for 45min or until a skewer inserted into the centre comes out clean. Leave to cool in tin for 10min, then lift on to a wire rack and leave to cool completely.
    To make the cream cheese frosting, beat icing sugar, cream cheese, butter and vanilla extract in a large bowl with a handheld electric whisk until smooth. Spread over top of cake and scatter over walnuts, if using. Slice and serve.
