These are the prefect chocolate chip cookies! Made with vegetable oil instead of butter and they contain both almond and vanilla extracts!

2?½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup vegetable oil
1 cup packed brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Stir together the flour, baking soda and salt; set aside.
  • In a large bowl, cream together the vegetable oil, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and almond extracts. Blend in the dry ingredients, then fold in the chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 cup semi-sweet chocolate chips
3/4 cup sugar
1/2 cup * Land O Lakes® Light Butter with Canola Oil
1 large Land O Lakes® Egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups uncooked quick-cooking oats

Steps:

  • Heat oven to 350°F.
  • Place 1/3 cup chocolate chips in microwave-safe bowl. Microwave, stirring every 15 seconds, until melted. Set aside.
  • Combine sugar and Light Butter with Canola Oil in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add melted chocolate, egg and vanilla; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in remaining chocolate chips and oats.
  • Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake 10-12 minutes or until set. (Do not overbake.) Cool 1 minute on cookie sheet; remove to cooling rack.
