1 (18-inch) French baguette, cut into 3/4-inch slices
¼ cup extra-virgin olive oil, divided
1 (14.5 ounce) can Hunt's® Petite Diced Tomatoes, drained
? cup chopped fresh basil
2 teaspoons minced garlic
¼ teaspoon kosher salt
? teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place bread slices on a baking sheet. Brush tops with 2 tablespoons olive oil. Bake 12 to 15 minutes or until lightly toasted.
  • Combine remaining 2 tablespoons olive oil, drained tomatoes, basil, garlic, salt, and pepper in a small bowl.
  • Divide tomato mixture evenly over toasted bread. Serve immediately.

I made this at the very end of tomato season and boy did I wish I had made it earlier. I made 20 half pints. We love this recipe. So big on flavor and you will want to make more for last minute on hand appetizers, gift giving or a quick make and take to a party. We have also served this at every holiday and party since summer. It's been a bit hit with friends and family.

4 - cloves garlic, minced
1/2 cup(s) dry white wine
1/2 cup(s) white wine vinegar
1/4 cup(s) balsamic vinegar
1 1/4 cup(s) water
2 tablespoon(s) sugar
2 tablespoon(s) dried oregano
2 tablespoon(s) dried parsley
2 tablespoon(s) dried basil
1 tablespoon(s) salt
8 cup(s) diced roma tomatoes

Steps:

  • Prepare canner, jars and lids. Makes 6 half pints.
  • In large sauce pan, combine vinegars, garlic, wine, water, seasonings and salt. Bring to a boil.
  • Reduce heat and let simmer for 5 minutes.
  • Remove jars from canner and fill with tomatoes, leaving about 1/2 inch headspace.
  • Fill jars with vinegar mixture, leaving 1/2 headspace.
  • Remove any air bubbles, wipe rims and affix lids.
  • Process in a boiling water bath for 20 minutes.
  • Remove from canner and let cool.

I made the bruschetta recipe from the Bernardin tomato book two years back and was really disappointed; it is so vinegary, and the tomatoes turned so mushy, it wasn't like the fresh product at all. Have ended up just tossing most of the jars (half-pint) into big batches of spaghetti sauce so as not to completely let them go to waste.
