Tomato Basil Soup Recipe: How to Make It - Taste of Home image

After just one taste of this slightly sweet tomato and herb soup, my family never went back to canned soup again! I adapted this recipe from one I seen in an old cookbook. —Chris Baker of South Lake Tahoe, California

Yield 6 servings (2-1/4 quarts).

Number Of Ingredients 10

4 medium carrot, finely chopped
1 large onion, finely chopped
1/4 cup butter, cubed
1 can (49 ounces) reduced-sodium chicken broth or 6 cups vegetable broth, divided
1 can (29 ounces) tomato puree
5 teaspoons dried basil
1-1/2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon white pepper
1 can (12 ounces) fat-free evaporated milk

Steps:

  • In a Dutch oven, cook carrots and onion in butter over medium-low heat for 30 minutes or until vegetables are tender, stirring occasionally. Remove from the heat and cool slightly., In a blender, place 1/2 broth and the cooled vegetables; cover and process until blended. Return to the Dutch oven. Stir in the tomato puree, basil sugar, salt, pepper and remaining broth. , Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Reduce heat to low. Gradually stir in evaporated milk; heat through (do not boil).

This is the soup I crave on nights I want soup with a sandwich (great with grilled cheese or garlic bread!). It's super easy and can be made anytime of the year because it uses canned tomatoes.

Number Of Ingredients 16

2 teaspoons olive oil
1 tablespoon unsalted butter
1 cup finely diced celery
1 cup finely diced carrots
1 cup finely diced onions
2 tablespoons all purpose or gluten-free flour
3 1/2 cups reduced sodium chicken broth (or vegetable for vegetarians)
1 3/4 cups reduced fat (2% milk)
28 oz can San Marzano whole plum tomatoes (with juice)
1 sprig fresh thyme
1/4 cup fresh basil (chopped)
2 bay leaves
Parmesan or Romano cheese rind (optional)
1/3 cup grated Pecorino Romano cheese
3/4 teaspoon kosher salt (or more to taste)
fresh black pepper (to taste)

Steps:

  • Use the saute button on the Instant Pot, then add the oil and butter, when melted add the celery, carrots and onions; cook 5 to 6 minutes, or until tender.
  • Add the flour, stir and cook 1 to 2 minutes. Add the broth, milk, and pour the juice of the tomatoes into the Instant Pot, then roughly crush the tomatoes with your hands; add to the pot. Add the thyme, basil, and bay leaves and parmesan rind if using.
  • Cover and cook high pressure 30 minutes. Quick or natural release, remove the cheese rind and herbs then blend the soup using an immersion blender until smooth (or you can carefully do this in small batches in the blender).
  • Add the 1/3 cup grated Pecorino cheese, salt and pepper, adjusting to taste.
  • To serve, ladle into bowls, top each with basil and 1 teaspoon parmesan.

  • Instant Pot directions: Turn pressure cooker to saute feature. Add olive oil, onion, carrots and garlic. Saute until starting to soften, about 4-5 minutes. Add diced tomatoes, chicken broth, salt, celery salt, pepper, and brown sugar. Place lid on pressure cooker and set to high pressure for 12 minutes. When instant pot is finished, do a quick release. Then add in fresh basil and use immersion blender again to puree till smooth. Or pour into blender, and blend, then add back to pot. If adding ravioli, turn saute feature on.
