The secret to making these peanuts is to carefully follow the visual cues at each step of the recipe. You want to achieve just the right balance between crystallized sugar and melted caramelized sugar.

2 cups unsalted roasted peanuts (10 ounces)
1 cup sugar
1/3 cup water
Coarse salt

Steps:

  • Heat peanuts, sugar, and water in a 12-inch skillet over medium heat, stirring occasionally, until sugar is grainy and crystallized, 15 to 18 minutes. (Sugar should not caramelize.)
  • Raise heat to medium-high, and continue to cook, stirring constantly, until sugar just starts to melt again. (Sugar will start to caramelize. Adjust heat if sugar begins to burn or smoke.) Sprinkle with 1 1/2 teaspoons salt. Once peanuts are coated, with some crystallized sugar remaining, transfer to a parchment-lined baking sheet; spread into a single layer using a rubber spatula.
  • Transfer sheet to a wire rack, and let stand until cool and hardened, about 30 minutes.

Moreover, all kinds of peanut candies that are very popular in supermarkets now appear in the form of crushed peanuts. Such crushed pieces are suitable for all ages and are easier to eat.

100 g peanut kernel
20 grams White sesame
60 grams White sugar
68 grams maltose
8ml Corn oil

Steps:

  • Ingredients: 100g peanut kernels, 20g white sesame seeds, 60g white sugar, 68g maltose, 8ml corn oil
  • Roasted peanuts, let cool,
  • Saute white sesame seeds until fragrant and let cool.
  • Peel the peanuts,
  • Cut into crumbles.
  • Mix peanuts and sesame seeds,
  • Put it in the oven, 100 degrees, keep warm, and set aside.
  • Pour the oil and sugar into the pot,
  • The small fire melted,
  • Continue to cook until brownish red,
  • Add maltose and simmer slowly.
  • Use a thermometer to measure the temperature, boil the syrup to 140 degrees,
  • Pour in peanuts and sesame seeds and mix well quickly.
  • Pour it on the chopping board and let it cool slightly.
  • While it’s hot, arrange it into a square with a thickness of about 1.5-2 cm.
  • Cut into small squares about 2-3 cm square,
  • Spread out and let cool.
