2 pound fat-free ricotta cheese
3 eggs
1/4 cup sugar
1 teaspoon vanilla extract
1 (16-ounce) package sugar-free chocolate cake mix
1 (1.4-ounce) package sugar-free instant chocolate pudding mix
1 cup fat-free milk
1 (8-ounce) container fat-free frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • In a large bowl, with a hand mixer, beat ricotta cheese, eggs, sugar, and vanilla until smooth; set aside. In another large bowl, prepare cake mix according to package directions. Pour cake batter evenly into baking dish. Slowly pour cheese mixture evenly over cake batter.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Let cool completely.
  • In a medium bowl, whisk pudding mix and milk until smooth. Fold whipped topping into pudding until well combined. Spread mixture on top of cake.
  • Refrigerate 4 hours or until ready to serve.

1 1/2 cup quick-cooking oats
1/2 cup light brown sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup unsweetened applesauce
1/4 cup canola oil
1 egg
1 teaspoon vanilla extract
1/4 cup chopped walnuts
confectioners' sugar (optional)

Steps:

  • Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
  • Place the oats in a blender or food processor and blend until they resemble flour; place in a medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well.
  • In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish.
  • Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then sprinkle with confectioners' sugar if desired.
