Idaho Potato Salad Recipe: How to Make It image

Mom used to make this potato salad without a recipe. When I got married, she and I made it one afternoon and wrote down the ingredients so I could make it at home. Of course, we used our famous Idaho potatoes.

4 pounds potatoes, cooked and peeled
3/4 cup sliced peeled cucumber
2 hard-boiled large eggs, chopped
2 green onions, sliced
4-1/2 teaspoons chopped dill pickle
1 cup mayonnaise
1-1/2 teaspoons dill pickle juice
1-1/2 teaspoons prepared mustard
3/4 cup sliced radishes

Steps:

  • Cut potatoes into 1/4-in. thick slices; place in a large bowl. Add cucumber, eggs, onions and pickle. , In a small bowl, combine the mayonnaise, pickle juice and mustard; pour over potato mixture and toss gently to coat. Cover and refrigerate. Fold in radishes just before serving.

2 pounds Idaho® potatoes, peeled and diced (about 5 cups)
½ cup mayonnaise or light mayonnaise
2 tablespoons apple cider vinegar
1 teaspoon salt
¼ teaspoon black pepper
1 cup finely diced celery
½ cup chopped hard-boiled egg
2 teaspoons celery seeds
½ cup onion or scallion, finely chopped
2 tablespoons fresh parsley, chives or dill, chopped

Steps:

  • 1. Place potatoes in a large pot and add enough water to cover potatoes. Bring to a boil over high heat. 2. Cook 13-15 minutes or until potatoes are tender. Drain. 3. In a large bowl, combine mayonnaise, vinegar, salt and pepper. 4. Add potatoes, celery, hard-boiled eggs, celery seeds and optional add-ins. 5. Toss to coat thoroughly. Chill.

Stir in remaining ingredients. 14. Ladle 1 cup chowder into a soup bowl.
