1 pound ground chicken or pork
1 cup shredded green cabbage
2 cloves garlic (minced)
2 green onions (chopped)
1 tbsp soy sauce
1 tbsp freshly ginger (grated)
1 tsp sesame oil
2 tbsp vegetable oil
1 package round wonton wrappers (about 45)

1 lb ground pork
1 pkg large egg roll wrappers
1 head of napa cabbage
1/2 cup green part of green onions
1/2 cup white part of green onions
1 cup roughly chopped cilantro
2 tbsp minced ginger
2 cloves minced garlic
2 eggs, whisked
2 tbsp sesame oil
2 tbsp soya sauce
1/4 cup sweet chili sauce
1/4 cup soy sauce
1 tbsp rice vinegar

Steps:

  • Thinly slice the cabbage and place it in a large bowl. Add a generous amount of salt to the cabbage and mix well. Set it aside for about 10 minutes or until the cabbage has wilted and the moisture has begun to release.
  • Using your hands, squeeze as much of the moisture out of the cabbage as possible. Place it on a paper towel and set it aside.
  • Combine the pork with the wilted cabbage, whisked egg, white green onions, ginger, garlic, soy, sesame oil.
  • Place the egg roll wrappers on a flat surface. Using a circular cookie cutter, cut the egg roll wrappers into 20 circles and set them aside. Make sure to keep at least 4 egg roll wrappers for the XL handheld version later on.
  • Scoop about a tablespoon of the mixture into the center of each cut out wrapper. Put some water in a small bowl and set it aside.
  • Using your finger, lightly dab the perimeter of the wrappers, careful not to disturb the center filling.
  • Pick up the wrapper, and using your fingers to secure the filling and your thumbs to press the edges together, tightly fold the dumpling. Set it aside and continue the remaining dumplings
  • Add some cooking oil to a medium high pan. Add the dumplings in an even layer and cook for about 2 minutes. Then, add a bit of water, and cover the pan so the dumplings can continue cooking and steaming for an additional 5 minutes.
  • Combine the rice vinegar, chili sauce, soy sauce and about 1 tablespoon of the chopped green onions.
  • For the extra large dumpling: Using some water and your finger, dab some water on one side of each large egg roll wrapper. Place them on top of one another creating one extra large egg roll wrapper.
  • Divide the remaining and place in the middle of the large wrapper. Proceed to close it in the same fashion as the mini versions.

If you plan on frying the pot stickers, standard egg roll wrappers will work fine. However, if you plan on eating the dumplings steamed or simmered in a soup, look for thin wrappers that hold up better without frying. Keep in mind that many producers creating pot sticker wraps label them as gyoza wrappers; when given a choice, use gyoza wraps over egg roll wraps for ease of use.
