8 large eggs
1/2 cup 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium ripe avocado, peeled and cubed
2 tablespoons butter
6 bacon strips, cooked and crumbled

Steps:

  • In a bowl, beat eggs. Add milk, salt and pepper; stir in avocado. In a skillet over medium heat, melt butter. Add egg mixture; cook and stir gently until the eggs are completely set. Sprinkle with bacon.

2 tablespoons Dijon mustard
4 teaspoons apple cider vinegar 
1/4 cup avocado oil 
Kosher salt and freshly ground black pepper 

Steps:

  • In a small mixing bowl, whisk together the mustard and vinegar. Pouring slowly, add a thin stream of avocado oil to the bowl, whisking with the other hand. Continue to whisk until all of the oil has been poured into the bowl and the ingredients have come together homogeneously. Season with salt and pepper.
  • Serve over your favorite green salad.
