On one of the many days this summer when I was happily preparing corn for dinner, it occurred to me that the classic method of boiling could dilute corn’s sweet flavor. I wanted to find a way to concentrate the flavor, and seal it in. I decided to husk the corn and cook it whole in a sauté pan, with nothing but some olive oil and salt. The result was corn that tasted sweet, rich and maybe just a little meaty. Cooking it on a grill produced the same results, but with a warm, smoky flavor.   • Fresh corn on the cob – as many ears as you'd like to make

  • Olive oil

  • Salt

Steps:

  • Husk the corn. Brush it lightly with olive oil and season with salt.Heat a sauté pan or grill on medium-high heat. When hot, place the corn in the pan. Using tongs, rotate the corn every few minutes so that it browns all over. Baste the corn with a little olive oil, as needed. If the corn is browning or charring too fast, lower the heat slightly. Cook for 7-10 minutes, until the corn is tender.Eat the corn as-is, or cool to room temperature and slice the kernels from the cob and eat with a fork.

Sweet, fresh corn is a popular addition to summer salads, soups, and pastas. Whether you purchase white or yellow, sweet corn is so deliciously crisp and tender that it can be cut fresh from the cob and added to dishes without being cooked. Grilled corn on the cob is always a treat, but you can achieve that same great taste without firing up the grill with our Oven-Roasted Corn on the Cob recipe. To make corn on the cob in the oven, start by making a flavored butter. Use softened butter, garlic salt, pepper, and a mixture of your favorite herbs, such as rosemary, thyme, and parsley. Spread the butter over each ear of corn and wrap individually in foil. Bake for about 20 to 25 minutes and unwrap. A flavored butter is an easy way to add more taste to your dish. To cut the corn off the cob, remove the husks and silks. Stand the corn upright on a large cutting board. Using a sharp knife, cut straight down across the base of the kernels. Use the kernels in soups, salads, and salsas for a fresh, summer meal.

1/4 cup unsalted butter, softened
1 tablespoon chopped fresh flat-leaf parsley
2 medium garlic cloves, minced (2 tsp.)
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
4 ears fresh corn, husks removed

Steps:

  • Preheat oven to 425°F. Stir together butter, parsley, garlic, rosemary, thyme, salt, and pepper in a bowl until evenly combined.
  • Spread 1 tablespoon herb butter on each corn cob; wrap each individually in aluminum foil. Place foil-wrapped corn on a baking sheet. Bake in preheated oven until corn is soft, 20 to 25 minutes, turning once halfway through cook time. Remove corn from foil, and serve
