Freezing fresh Strawberries in Sugar is a great way to enjoy Strawberries throughout the year. It's really quick, easy and a great way to get started in the home preservation of fruits and vegetables. Sadly, local Strawberries are only available for a few weeks each year so, freezing them insures you have a good supply to last for months to come. Give it a try, you'll love them.

Number Of Ingredients 3

3 – quarts of fresh Strawberries.
2 1/4 – cups of Sugar, more or less.
Approved freezer storage containers or bags.

Steps:

  • Place fresh Strawberries in your sink, along with a colander.
  • Use a paring knife or huller and carefully remove the berry caps.
  • Discard caps and any bruised or bad berries.
  • Gently wash each berry under cold running water, place in colander.
  • Let the berries drain in the colander for about 5 minutes.
  • Place berries in a large bowl or pot.
  • Add 3/4 cups of sugar for each quart of berries.
  • Gently stir the sugar and berries until all sugar crystals have dissolved. Let sit for about 5 minutes and gently stir again.
  • Spoon the berries and juice into the freezer approved bags or containers.
  • Wipe the tops of the containers, apply lids and seal securely.
  • Place the sealed containers in the freezer as quick as possible.

1 tablespoon lemon juice
½ teaspoon unflavored gelatin (powder (see notes))
1 lb fresh strawberries ((fresh or frozen), hulled and quartered)
1/3 cup granulated sugar

Steps:

  • Combine lemon juice and gelatin; mix to dissolve gelatin. Set aside.
  • In a medium saucepan, combine chopped strawberries and sugar. Place over medium-high heat and bring to a boil, stirring occasionally. Reduce heat to medium-low and simmer 8 -10 min.
  • Add the gelatin-lemon mixture; stir to combine. Continue to simmer, stirring occasionally, for 5 – 7 more minutes, or until sauce is thickened. Remove from heat and cool to room temperature.
  • Keep in mind sauce will thicken up slightly as it cools and even more with refrigeration.
