Aug 18, 2014 · So, long question short: I want to replace SOME of the butter with a neutral oil, probably vegetable oil. However I want to keep some butter in there for taste/texture. I know that butter is 80% fat, and oil is 100%, so I would need to use only 80% of the butter weight in oil, and then use a liquid to top up the other 20%, I'm thinking milk.
