Mexican independence day is almost here; why not celebrate with a colorful dish like these shrimp a la mexicana? What makes them Mexican style is that the ingredients represent the colors of the Mexican flag: green (serrano peppers and cilantro), white (onions) and red (tomato). Celebrate a Mexican fiesta with the family and you’ll see why this traditional dish is so popular.

Number Of Ingredients 12

3 Roma tomatoes, chopped into large pieces
1/2 medium onion, chopped into large pieces
1 serrano pepper
1 garlic clove
2 cups water
2 tablespoons olive oil
1/2 medium onion, finely chopped
1 red bell pepper, finely chopped
1 lb medium size shrimp, peeled and deveined
3 Roma tomatoes, finely chopped
1 serrano pepper, finely chopped (optional)
1 fresh cilantro bunch

Steps:

  • For the sauce: Blend tomatoes, onions, serrano pepper and garlic until everything is completely processed. Add water and blend a little more until everything is combined.
  • For the shrimp: Heat the olive oil in a large frying pan on medium-high heat. Sauté the onion and bell pepper for 3-5 minutes or until the onion is translucent. Add shrimp and cook them until they turn pink. Add chopped tomatoes, serrano pepper, the blended mixture and fresh cilantro; season with salt, to taste. Reduce heat as soon as it starts to boil, cover and let cook for 10-12 minutes, until the sauce thickens a little more.
  • Serve and enjoy!
