2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract
Sliced fresh strawberries or syrup

Steps:

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

4 large eggs
4 oz cream cheese (or coconut cream)
1 cup almond flour
2 tbsp melted butter (or coconut oil)
2 tsp vanilla extract
2 tbsp Erythritol
2 tsp baking powder
Keto Maple Syrup Optional

Steps:

  • In a large bowl crack the eggs and mix with an electric mixer for about 2 minutes until frothy
  • Add the softened cream cheese or coconut cream, melted butter, vanilla extract, and continue mixing.
  • Mix in the dry ingredients: almond flour, sweetener, baking powder until you get a smooth waffle batter.
  • Preheat your waffle iron and grease it with butter or cooking spray.
  • Pour up to 1/3 cup of the batter into the waffle iron and cook until golden brown and crispy.
  • Serve immediately with butter, berries, or sugar-free maple syrup.
