Members Choice!!! Super easy to make with simple ingredients, this pineapple cake is going to become a go-to dessert. The cake is super moist and has a tropical feel with the pineapple. The trick is putting the cream cheese icing on the cake while it is warm. The icing then seeps into the cake and is the perfect sweet complement. We sprinkled the optional pecans and loved the crunch it adds. Garnishing each piece of the cake with coconut is wonderful... add as little or as much as you like. That this to a potluck and watch it disappear.

THERE IS NO BUTTER OR OIL IN THE CAKE, BUT SO AS NOT TO MISLEAD ANYONE, THERE IS BUTTER IN THE FROSTING
2 cup(s) all-purpose flour
2 cup(s) sugar
2 - eggs
1 teaspoon(s) baking soda
1 teaspoon(s) vanilla
1 pinch(es) salt
1 can(s) crushed pineapple (undrained) in its own juice - not syrup, 20 oz.
1 cup(s) chopped nuts, optional
CREAM CHEESE FROSTING
1/2 cup(s) butter or 1 stick
1 package(s) cream cheese, softened, 8 oz.
1 teaspoon(s) vanilla
1 1/2 cup(s) confectioners' sugar
- shredded coconut for garnish, optional

Steps:

Preheat oven to 350 degrees F.
Put all the cake ingredients into a large mixing bowl.
Mix all of the cake ingredients together.
Pour into a greased 9X13 inch pan.
Bake at 350 for 35 - 40 minutes (until the top is golden brown).
For the frosting: Beat butter, cream cheese and vanilla together until creamy.
Gradually mix in powdered sugar.
Blend until frosting is mixed well.
Frost cake with cream cheese frosting while still warm.
Sprinkle with chopped nuts, if desired.

1/3 cup butter, melted
2/3 cup packed brown sugar
1 can (20 ounces) sliced pineapple
1/2 cup chopped pecans
3 large eggs, separated, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
9 maraschino cherries
Whipped topping, optional

Steps:

Preheat oven to 375°. In an ungreased 9-in. square baking pan, combine butter and brown sugar. Drain pineapple, reserving 1/3 cup juice. Arrange 9 pineapple slices in a single layer over sugar (refrigerate any remaining slices for another use). Sprinkle pecans over pineapple; set aside. , In a large bowl, beat egg yolks until thick and lemon-colored. Gradually add sugar, beating well. Blend in vanilla and reserved pineapple juice. Combine flour, baking powder and salt; add to batter, beating well. , In a small bowl with clean beaters, beat egg whites on high speed until stiff peaks form; fold into batter. Spoon into pan., Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Let stand 10 minutes before inverting onto serving plate. Place a cherry in the center of each pineapple slice. If desired, serve with whipped topping.
