KENTUCKY BLACKBERRY JAM CAKE | JUST A PINCH RECIPES

Steps:
- Place cake mix, jam, buttermilk, oil, cinnamon and eggs in a large mixing bowl and beat on low speed 30 seconds. Increase speed to medium and beat 1 1/2 minutes longer or until smooth. Fold nuts into batter.
- Pour into 2 greased and floured 9 inch cake pans. Bake at 350 degrees for 30 to 34 minutes. or until cake tests done.
- Cool on wire racks 10 minutes, then remove from pans. Let the layers cool completely on the racks before frosting. Frost with cream cheese frosting or caramel frosting.

- Place first 7 ingredients in a large saucepan; bring to a boil. Reduce heat; simmer, covered, until pears are tender, 15-20 minutes, stirring occasionally. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 8 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

- Place the apricot jam in a small pan with a splash of water and simmer on a low heat, then remove from heat and leave to cool a little.
- Using a pastry brush, brush the top of the cake with jam and arrange your fruit on top, starting with the bigger pieces, dotting the smaller fruits and nuts in and around the gaps.
- Finish the cake by brushing everything with a final coat of the apricot glaze to give it a lovely gloss.
