Vegetable oil, for frying
2 cups all-purpose flour
3 tablespoons Creole seasoning
4 eggs, whisked
2 cups seasoned panko breadcrumbs (recommended: Progresso Panko Crispy Bread Crumbs Italian Style)
20 large shrimp (21/25), peeled and deveined, tails removed
Kosher salt
2 cloves garlic, grated
4 tablespoons (1/2 stick) unsalted butter, melted
4 hoagie rolls, split
Tartar Sauce, recipe follows
Green or red leaf lettuce, for garnish
1 tomato, thinly sliced
1 cup shredded red cabbage
1/2 cup mayonnaise
2 tablespoons finely chopped cornichons
2 tablespoons whole grain mustard
1 tablespoon chili sauce
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh parsley
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 2-inches vegetable oil in a Dutch oven or cast-iron skillet over medium-high heat until the temperature registers 350 degrees F.
  • Whisk the flour and Creole seasoning in a shallow bowl. Add the eggs to another shallow bowl and the panko to a third shallow bowl. Dredge the shrimp in the flour, followed by the egg and finally coat with the panko, shaking off any excess in between dredges.
  • Working in batches, fry the shrimp until golden brown, 2 1/2 to 3 minutes. Drain the shrimp on paper towel- lined plate and season with salt.
  • Add the garlic to the melted butter and brush on the inside of each roll. Toast the rolls in the oven until golden brown and crispy, about 7 minutes.
  • Spread the Tartar Sauce on each roll, top with lettuce leaves, tomato slices, 5 fried shrimp and some shredded cabbage.
  • In a small bowl, mix together all of the ingredients and season with salt and pepper, to taste.;

This is a quick and easy sandwich that gives a slight kick of heat. Have this one on hand when you want to impress your guests.

3/4 cup mayonnaise
1/2 cup sour cream
2 tablespoon apple cider vinegar
1 tablespoon sugar
1/2 tablespoon celery s.a.l.t.*
1 1/2 tablespoon sweet pickle relish
1/2 package coleslaw mix
1 pound peeled, deveined shrimp, tails removed
1 teaspoon olive oil
2 teaspoon blackened cajun r.u.b.*
5 sub rolls
5 tablespoon butter, softened

Steps:

  • In a medium size bowl mix the first 6 ingredients. Add in the coleslaw and mix until the cabbage is fully coated, set aside. In a non-stick pan add the olive oil and swirl around until pan is coated and heat over medium-high heat. Once the pan is hot add the shrimp and sprinkle a teaspoon of the Cajun seasoning over the top. Cook until shrimp are pink and just cooked through, turning over half way through and sprinkling with the remaining Cajun seasoning.
  • Heat broiler to 500 degrees, butter buns and place on a baking sheet with the inside facing up. Broil until golden brown. To assemble the sandwiches, divide shrimp among the buns and top with about a 1/3 cup of coleslaw down the middle.

It's Fat Tuesday, meaning that Mardi Gras is in full swing! My mind started dreaming of creole, King Cakes, colorful beads, parades, and cocktails on Bourbon street. Although, I will not be there to partake in the craziness that is Mardi Gras, I was in the mood to make something full of bold Cajun flavor and packed with a little heat. I'm usually not one who goes for spicy food since I used to consider medium salsa my breaking point, but having broadened my horizons since living with the hot sauce king (my husband), I have come to appreciate a bold and spicy dish every now and then. The flavors in this dish are just that - spicy, robust and full of flavor! The spicy remoulade sauce has just enough mayonnaise base that it cuts the heat perfectly!
