SEAFOOD BOIL RECIPE | ALLRECIPES

Seafood Boil Recipe | Allrecipes image

An old recipe that's especially good for family get-togethers. It's good, it's fun, and clean-up is easy. It's best done outside around a picnic table. When shrimp and crabs are done, cover picnic table with four to five layers of newspaper. Remove everything from pot, drain, and spread in center of table. Gather everyone around and enjoy the feast. When everyone has had their fill, gather up the leftovers (if there is any), put all the scraps in the center of the table, roll up the newspaper around them, and put them in the trash. Go wash the one pot and the cleanup is done. Have fun and enjoy.

Total Time 55 minutes

Prep Time 10 minutes

Cook Time 30 minutes

Yield 15 servings

Number Of Ingredients 9

1 pinch salt to taste
1 (8 fluid ounce) bottle liquid shrimp and crab boil seasoning
3 pounds kielbasa sausage, cut into 1 inch pieces
5 pounds new red potatoes
4 lemons, halved
1 tablespoon diced green chile pepper, or to taste
12 ears fresh corn
10 pounds medium shrimp - peeled and deveined
12 blue crabs, cleaned

Steps:

  • Use a very large pot (we use a 40 quart pot), fill it half full with water; bring water to a full boil. Add salt, shellfish boil, sausage, and potatoes. Let cook until the potatoes are approximately 1/2 completed cooking.
  • Stir in lemons, hot peppers, and corn. Continue boiling until all of the vegetables are tender. Turn off the heat.
  • Mix in shrimp and crab. Cover pot and let sit for 10 to 15 minutes. When shrimp are pink and the crabmeat opaque and flaky, remove all of the vegetables and shellfish from the pot, and drain well. Serve immediately.

SEAFOOD BOIL WITH CAJUN SEASONING | FOOD & WINE

Seafood Boil with Cajun Seasoning | Food & Wine image

The secret to a seafood boil packed with perfectly cooked shrimp, king crab legs, and clams? Taking it one step at a time. First, simmer a flavor-packed mixture of lemons, Cajun seasoning, onions, garlic, and chiles with small new potatoes to give them a head start. Then add your clams and gently spicy andouille sausage and simmer a few minutes more. Finally, toss in the faster-cooking shrimp and king crab legs, along with frozen corn on the cob, which cools down the boil without diluting it like ice would. A warm bowl of butter sauce spiked with more Cajun seasoning makes the perfect dipping partner for every delicious bite.

Total Time 1 hours 35 minutes

Number Of Ingredients 22

4 ears fresh yellow corn, cut crosswise into 3-inch pieces
6 quarts water
4 large lemons, halved crosswise
2 large red onions, halved lengthwise
3 medium jalapeño chiles, halved lengthwise and unseeded (optional)
½ cup Cajun seasoning
1 tablespoons kosher salt
2 ½ teaspoons cayenne pepper (or to taste)
2 large garlic heads, halved crosswise
4 fresh or dried bay leaves
1 ½ pounds baby Yukon Gold potatoes, halved
2 pounds littleneck clams, scrubbed
1 pound andouille sausage, cut into 2-inch pieces
6 frozen king crab legs (about 2 pounds total), thawed
1 ½ pounds jumbo unpeeled, deveined raw shrimp, tail-on
¼ cup water
1 ½ cups (3 sticks) cold unsalted butter, cut into pieces
¼ cup finely chopped fresh flat-leaf parsley
2 ½ teaspoons Cajun seasoning
2 teaspoons fresh lemon juice (from 1 large lemon)
2 teaspoons Louisiana-style hot sauce (such as Crystal)
½ teaspoon Worcestershire sauce

Steps:

  • Place corn in a single layer on a large plate; freeze until ready to use, about 1 hour.
  • Meanwhile, add water to a large (16-quart) stockpot. Squeeze juice from lemon halves into water, removing and discarding seeds; add squeezed lemon halves, onions, jalapeños (if using), Old Bay, salt, cayenne, garlic heads, and bay leaves. Cover and bring to a boil over high. Add potatoes. Cover pot, and return to a gentle boil over high. Uncover, and boil, undisturbed, for 15 minutes. Add clams and sausage. Cover pot, and return to a gentle boil over high. Uncover, and boil, undisturbed, for 5 minutes. Remove from heat.
  • Add crab legs, shrimp, and frozen corn to stockpot, using tongs to incorporate them into the broth. Cover pot, and let mixture stand, undisturbed, 15 minutes.
  • Meanwhile, make the Old Bay Butter Sauce: Bring water to a boil in a medium saucepan over high. Reduce heat to low; gradually add butter pieces, whisking until mixture is emulsified and thickened (do not let sauce boil). Remove from heat; stir in parsley, Old Bay, lemon juice, hot sauce, Worcestershire, and cayenne and transfer to a sauceboat or small serving bowl.
  • Working in batches, drain the seafood boil in a colander, using tongs to help transfer ingredients to the colander and then to a serving platter. Serve the seafood boil alongside the warmed Old Bay Butter Sauce.

CAJUN SEAFOOD PASTA RECIPE | ALLRECIPES
This recipe is a hot one, but delicious! If you are weak of tongue, then divide the amounts of peppers in half. Better to add more than spoil your creation! Bay scallops are preferred, but the larger sea scallops can be used if they are cut in half. This dish can also be placed in a casserole dish and placed under the broiler until top turns golden brown!

CAJUN SHRIMP BOIL RECIPE - NYT COOKING
In New Orleans, a seafood boil, the Southern tradition of gathering around a newspaper-lined table to eat large amounts of boiled shellfish with your bare hands, is all about salt and spice. In the words of Jared Austin, a Mississippi riverboat pilot and seafood-boil master, ‘‘Nothing about any of this is subtle — people standing around the pot should sneeze and cough.’’ The key to a successful shrimp boil is layering ingredients into the pot so that everything is done cooking at once: First add the potatoes and sausage, then the shrimp, then the frozen corn to bring the temperature down and prevent overcooking. Let it all soak to absorb the salt and spice, then dump it out onto the table and eat with copious amounts of rémoulade. While this recipe can easily be halved, it’s a simple — and extraordinarily fun — way to feed a crowd. Just remember to heed Austin’s advice: ‘‘Don’t be afraid of cayenne. Don’t be afraid to let your nose run.’’

  • Add potatoes and sausage to the pot, and let the water return to a boil. Turn off heat, and allow to soak for 10 minutes or until potatoes are barely tender when pierced with a knife. Bring the water to a boil, and add shrimp. Cook for 3 minutes, then turn off heat, add corn and allow to soak for 7 minutes. Drain, and serve immediately with rémoulade (preferably on a newspaper-lined table).

REAL CAJUN SEAFOOD GUMBO (FROM A LOUISIANIAN) RECIPE ...
Once again, there seems to be some mistake between cajun and creole cooking, and then another completely separate group of people trying to replicate a gumbo without thinking. Cajun people do not use tomatoes and okra in their gumbo. We also DO NOT use already made soups, or bases in our gumbos. We use very simple ingredients and get a very good result. Please do not season with hot sauce at the table, it's rude. Please do not use more andouille than the recipe calls for, you will regret it later!

SEAFOOD GUMBO - NEW ORLEANS STYLE RECIPE - FOOD.COM
Beautifully presented in fine New Orleans style, this recipe appeared in the Spring/99 issue of Gusto Magazine, compliments of executive chef Richard Benz, Upperline Restaurant, New Orleans. A crisp chablis would complement this dish and prepare your palate for a delicious dessert of Bananas Foster. I have prepared Seafood Gumbo - New Orleans Style, served it to appreciative guests, eager to also enjoy the above mentioned dessert. This recipe serves rather a large quantity and is therefore suitable for larger families, or "company's coming" meals. Note: While the recipe stipulates specific quantities of seafood items, there is no reason why chefs cannot increase the quantities... to thicken the sauce. For instance, additional shrimp; add squid if you like.... Okra will thicken the "sauce" also...
