Rice Dressing Recipe: How to Make It - Taste of Home image

This yummy rice mixture is a delightful change from our traditional corn bread dressing. To make it a meal in itself, I sometimes add finely chopped cooked chicken and a little more broth before baking. —Linda Emery, Bearden, Arkansas

Number Of Ingredients 11

4 cups chicken broth, divided
1-1/2 cups uncooked long grain rice
2 cups chopped onion
2 cups chopped celery
1/2 cup butter, cubed
2 cans (4 ounces each) mushroom stems and pieces, drained
3 tablespoons minced fresh parsley
1-1/2 to 2 teaspoons poultry seasoning
3/4 teaspoon salt
1/2 teaspoon pepper
Fresh sage and thyme, optional

Steps:

  • In a saucepan, bring 3-1/2 cups broth and rice to a boil. Reduce heat; cover and simmer until tender, about 20 minutes. , Meanwhile, in a skillet, saute onion and celery in butter until tender. Stir in rice, mushrooms, parsley, poultry seasoning, salt, pepper and the remaining broth. Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes. Garnish with sage and thyme if desired.

This is one of our favorite rice dressing (also known as dirty rice) recipes. Add this to a meatball stew and talk about good!

Number Of Ingredients 16

1 pound ground pork
1 pound ground beef
2 cups rice
1 can beef broth
1 small can liver spread, Devil's food or ground liver
1 cup celery, finely chopped
1 cup bell pepper, finely chopped
1 tbsp minced garlic
1 tbsp Tony Cachere's
1 tsp sugar
salt & pepper to taste
2 1/2 cup water
1 tbsp oil
1 tsp onion & garlic powder (optional)
1/2 tsp MSG (optional)
1 tbsp roux (optional)

Steps:

  • Heat up a large pot over medium heat. Pour 1 tbsp of oil into the pot.
  • Season ground pork and ground beef with Tony Cachere's, sugar, salt and pepper. If using optional ingredients (garlic & onion powder and MSG) add now as well. Mix well and add to the heated pot.
  • Stir occasionally until brown. Then add in all chopped vegetables (garlic, celery, bell pepper, onion). Let vegetables cook down for 5 minutes.
  • Add in the small can of liver. You may be tempted to skip this step, but this is the secret ingredient that makes this dish so good. Try it, you will like it.
  • If you have pre-made roux handy, add 1 tbsp. If not, you can skip it.
  • Stir well. After 2 minutes, add 1 can of beef broth and 2 1/2 cups of water. Stir again.
  • Cover and let boil for 5 to 7 minutes. Taste the soup to see if it needs more salt and/or pepper.
  • Add in the raw, rinsed rice. Stir evenly and cover. Simmer at a lower heat for 15 minutes. Do not stir it while it simmers, but make sure that it doesn't run out of water and burn.
  • After 15 minutes, check the rice to make sure it is cooked. You can give it a few more minutes if you need. If the rice is done, turn off the stove and let it sit for 5 minutes, uncovered.
  • Before serving, gently fold/stir the rice. Serve as a side dish or a main dish if you really love it. Goes well with Yummy Spicy Garlic Beans & Sausage if you just can't get enough Cajun food!

I first created the clone for this Cajun-style recipe back in 1994 for the second TSR book, More Top Secret Recipes, but I've never been overjoyed with the results. After convincing a Popeyes manager to show me the ingredients written on the box of red bean mixture, I determined the only way to accurately clone this one is to include an important ingredient omitted from the first version: pork fat. Emeril Lagasse—a Cajun food master—says, "pork fat rules," and it does. We could get the delicious smoky fat from rendering smoked ham hocks, but that takes too long. The easiest way is to cook 4 or 5 pieces of bacon, save the cooked bacon for another recipe (or eat it!), then use 1/4 cup of the fat for this hack. As for the beans, find red beans (they're smaller than kidney beans) in two 15-ounce cans. If you're having trouble tracking down red beans, red kidney beans will be a fine substitute.
