1 Pound Meyer Heritage Duroc Pork Tenderloin
1 Cup Flour
2 Eggs
1 Teaspoon Mustard
1 Cup Italian bread crumbs
1/4 Cup Fresh parsley
1 Tablespoon Vegetable oil
Salt and pepper to taste

Steps:

  • Preheat the oven to 400ºF.
  • Season the tenderloin with salt and pepper. Place the flour in a casserole dish and season with salt and pepper. In another casserole dish, beat together the eggs and mustard. Set a few pinches of parsley aside for garnish, then combine the rest with the Italian breadcrumbs in another casserole dish.
  • Dip the tenderloin into the flour, followed by the egg, and finally in the breadcrumbs. If desired, dip back into the egg and then into the breadcrumbs one final time. This makes for an extra crispy breading.
  • Spread the oil on a cookie sheet and place the tenderloin on top. Bake in the oven until the pork is no longer pink in the middle, about 20 minutes. Allow the tenderloin to rest for 5 minutes, then slice and serve.
