Cheese Nachos Recipe From Guy Fieri - Rachael Ray Show image

Guy Fieri shares the recipe for his Super Melty Cheese sauce + his best nacho-making tips.

Number Of Ingredients 32

2 ½ cups half-and-half
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
10 ounces easy melt cheese (such as Velveeta)
shredded
5 ounces provolone cheese
shredded
5 ounces cheddar cheese
shredded
5 ounces smoked gouda cheese
rind removed
 shredded
6 ounces tortilla chips
About 3 ladles black beans (half beans/half puree – see tip above)
About 3 ladles Super Melty Cheese Sauce
Shredded cheddar cheese
for topping
About 1 ½ cups carne asada
 pulled pork or your choice of protein
Sour cream or crema
for topping 
Chopped avocados
Salsa rojo and/or pico de gallo
for topping (see tip above for tip on salsa rojo) 
Chopped avocados
for topping
Pickled red onions
for topping
Sliced jalapeño
for topping
Fresh cilantro leaves
for topping

Steps:

  • For the Super Melty Cheese Sauce, in a 2 quart saucepan, bring ½ cup water and the half-and-half to a simmer over medium heat, then add the Worcestershire and hot sauce
  • Using a whisk, mix in the Velveeta a handful at a time until fully incorporated, then gradually add the remaining cheese
  • Mix until the cheese has melted and the sauce is smooth
  • For the nachos, preheat the oven to 350°F
  • On a rimmed baking sheet, spread the ingredients evenly and layer in the following order: tortilla chips, cheese sauce, black beans, protein and shredded cheddar
  • Place in the oven or under the broiler until the cheese melts, about 4 minutes
  • Remove from the oven, then scrape them into a cast iron skillet so they’re coated all over with the toppings
  • Add the rest of desired toppings such as sour cream or crema, avocados, salsa rojo and/or pico de gallo, jalapeño and cilantro and serve

2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
4 vine ripe tomatoes, seeded and chopped
1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level
1 small white onion, chopped
1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking
Salt
1 tablespoon extra-virgin olive oil
1 pound ground sirloin
2 cloves garlic, chopped
1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 teaspoon salt
1 1/2 teaspoons dark chili powder
1 1/2 ground cumin, half a palmful
2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level
1 can black beans, 15 ounces, drained
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
Sour cream
Chopped scallions
Chopped black olives
Diced pimento
Sliced avocado, dressed with lemon juice
Hot pepper sauces

Steps:

  • Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
  • Combine salsa ingredients in a bowl and set aside for flavors to marry.
  • Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
  • In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
  • Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

  • Preheat oven to 425º and line a large baking sheet with foil. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add ground beef and cook until no longer pink, 6 minutes more. Drain fat. Add garlic and taco seasoning and season with salt. Cook until meat is well browned and slightly crispy, 5 minutes more. Add refried beans and water to skillet and stir until combined.  Add half the tortilla chips and top with beef-bean mixture, half the cheese, half the black beans, and half the pickled jalapeños. Repeat one more layer. Bake until cheese is melty, 15 minutes. Scatter with tomato, avocado, green onions, and cilantro. Drizzle with sour cream and hot sauce and serve immediately.

  • In a skillet over medium-high heat, add the olive oil and half the onion. Cook it until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, paprika, cumin, crushed red pepper, salt, and pepper and stir to combine. Add the beans and hot water and stir. Reduce the heat to low and simmer while you prepare the other ingredients.To make the pico de gallo, combine the other half of the onion with the tomato, jalapeno, cilantro, lime juice, and 1/2 teaspoon salt. Stir it together and set it aside.To build the nachos, place a layer of tortilla chips on a platter or plate. Top with a layer of the beef/bean mixture, then all but 1/4 cup of the cheddar cheese. Add another layer of chips, another layer of the beef/bean mixture, and the Monterey Jack cheese. Add a final small layer of chips, then a small layer of beef and beans, then a final sprinkling of cheddar. Microwave in 45 second increments until the cheese is melted and bubbly. (You may also place the platter into a 325 degree oven if it's heatproof. Just leave it in until the cheese is melted.)Immediately sprinkle on the diced avocado and plenty of pico de gallo.Optional: Add dollops of sour cream here and there!Serve immediately!
