CHRISTMAS CANDY CANE COOKIES RECIPE: HOW TO MAKE IT

Steps:
- In a large bowl, cream the shortening, butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in egg and extracts. Combine flour and salt; gradually add to the creamed mixture. Divide dough in half; mix the food coloring into 1 portion. Cover and refrigerate both doughs for 2 hours or until easy to handle., Shape 1 teaspoon plain dough into a 4-in. rope. Shape 1 teaspoon red dough into a 4-in. rope. Place ropes side by side; press together lightly and twist. Place on an ungreased baking sheet; curve top of cookie down to form handle of cane. Repeat with remaining plain and red dough, placing cookies 2 in. apart on baking sheets., Bake at 375° for 8-9 minutes or until set. Combine the crushed candy and sugar; sprinkle warm cookies with candy mixture. Remove to wire racks to cool.

CANDY CANE DESSERT SQUARES RECIPE | LAND O’LAKES
Steps:
- Heat oven to 325°F.
- Combine all crust ingredients in bowl. Press onto bottom of ungreased 13x9-inch baking pan. Bake 10 minutes. Cool completely. Set aside.
- Melt chocolate chips and 2/3 cup whipping cream in 1-quart saucepan over low heat, stirring occasionally, 4-5 minutes or until smooth. Spread evenly over crust. Place in freezer at least 10 minutes while making filling.
- Combine powdered sugar, cream cheese and peppermint extract in bowl. Beat at low speed, scraping bowl often, until smooth and creamy. Gently stir in whipped cream and crushed candies. Spread evenly over ganache layer. Sprinkle with additional crushed candy, if desired. Cover; freeze 4 hours or overnight.
- Cut into squares. Top each serving with small candy cane, if desired. Serve frozen or refrigerated. Store frozen.

- In a heavy saucepan, combine marshmallows and milk over low heat. Cook and stir until marshmallows are melted and mixture is smooth. Remove from heat. , Stir in vanilla, salt, peppermint extract and food coloring. Cool 30 minutes, stirring several times. Stir in 2 tablespoons crushed candies; fold in whipped cream. , Spoon into crust. Refrigerate, covered, 8 hours or overnight. Just before serving, sprinkle with remaining candy.

- Preheat oven to 325º and grease an 8" or 9" springform pan with cooking spray. Wrap bottom of pan with aluminum foil and place on a baking sheet. Make cheesecake filling: In a large bowl using a hand mixer or in a stand mixer using the paddle attachment, beat cream cheese and sugar. Add eggs, one at a time, then sour cream, flour, peppermint extract, and salt. Gently fold in crushed candy canes. Make crust: In a large bowl, mix together graham cracker crumbs, melted butter, sugar, and salt. Press mixture into prepared pan. Pour filling over crust. Bake until center of cheesecake only slightly jiggles, about 1 hour 30 minutes. (If you want to bake the cheesecake in a water bath, wrap bottom of pan and place in a deep baking pan. Pour in enough boiling water to come up halfway in the baking pan.) Turn off heat, prop open oven door, and let cheesecake cool in oven, 1 hour, then remove aluminum foil and refrigerate cheesecake in pan until firm, at least 5 hours and up to overnight. Add whipped cream along the border of cheesecake and sprinkle with crushed candy canes.
