Garlic Mashed Red Potatoes Recipe: How to Make It image

These creamy garlic mashed potatoes are so good, you can serve them plain—no butter or gravy is needed. This is one of our favorite red potato recipes. —Valerie Mitchell, Olathe, Kansas

8 medium red potatoes, quartered
3 garlic cloves, peeled
2 tablespoons butter
1/2 cup fat-free milk, warmed
1/2 teaspoon salt
1/4 cup grated Parmesan cheese

Steps:

  • Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are very tender., Drain well. Add the butter, milk and salt; mash. Stir in cheese.

Boiled buttery and savory potatoes that make a delicious addition to any meal!

Number Of Ingredients 5

2 lbs small potatoes
2 cloves garlic (sliced in half)
1 bay leaf
3 Tbsp Irish butter (I use Kerrygold)
Salt (to taste)

Steps:

  • In a large Dutch oven, or heavy-bottomed pot, add enough water to completely cover the potatoes. Add the sliced garlic, bay leaf, and a sprinkling of salt. Boil on high heat, then reduce heat to medium/high. Add potatoes, and boil until fork tender (15 to 20 minutes). Do not overcook or the potatoes could become too soft.
  • Remove potatoes and discard the garlic and bay leaf. Add butter to the hot pot and stir until melted. Add boiled potatoes back to the pot and mix into the melted butter. Salt to taste.

  • Preheat oven to 425°. In a large pot, cover potatoes with water and add a generous pinch of salt. Bring water to a boil and simmer until potatoes are tender, about 15 minutes. Drain and let sit until cool enough to handle. On a large rimmed baking sheet, toss potatoes with melted butter, garlic, and thyme. Using bottom of a small glass or mason jar, press down on potatoes to smash them into flat patties. Season with salt and pepper, then sprinkle with Parmesan. Bake until bottoms of potatoes are beginning to crisp and Parmesan is golden, about 25 minutes.
