Butterscotch chips and cream cheese make a cookie kids (and grownups) will go wild for.

Yield Makes about 1 1/2 dozen

Number Of Ingredients 8

1 6-oz. pkg. butterscotch chips
? cup butter
2 cups graham cracker crumbs
1 cup chopped pecans
1 8-oz. pkg. cream cheese, softened
1 14-oz. can sweetened condensed milk
1 teaspoon vanilla extract
1 egg, beaten

Steps:

  • Melt butterscotch chips and butter in a saucepan over medium-low heat; stir in cracker crumbs and pecans.
  • Press half of mixture into an ungreased 13"x9" baking pan.
  • Beat cream cheese in a large bowl until fluffy; stir in condensed milk. Add vanilla and egg; mix well and pour over crumb mixture. Top with remaining crumb mixture.
  • Bake at 350 degrees for 25 to 30 minutes.
  • Chill until firm; cut into bars.

We took these to a potluck and they were a hit. They can easily be cut smaller to make a whole bunch of tasty little morsels. My husband wants to try them made with chocolate chips instead.

1 (12 ounce) package butterscotch chips
1/2 cup butter or 1/2 cup margarine
2 cups graham cracker crumbs
1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 large egg
1 cup chopped pecans

Steps:

  • Preheat the oven to 325°.
  • Grease or butter a 9 x 13 baking dish.
  • In a medium saucepan melt the chips and butter over low heat, stirring often. When melted and smooth remove from the heat and mix in the graham cracker crumbs. Set aside about 2/3 cup of the crumb mixture, press the rest into the bottom of the prepared pan to form the crust.
  • In a bowl beat the cream cheese until light and fluffy. Add the condensed milk, vanilla and egg, beat until smooth. Fold in the pecans. Pour cream cheese mixture on top of the crust then sprinkle with reserved crumb mixture.
  • Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool to room temperature and then serve chilled.

  • Make crust: Butter a 9"-x-13" baking pan and line with parchment paper, leaving a 2" overhang on all sides. Butter parchment, then set rack in the middle of the oven and preheat oven to 350°. In a food processor or blender, grind graham crackers into fine crumbs; add sugar and salt and pulse to combine. Transfer to a medium bowl, add melted butter, and use a fork or your fingers to blend mixture until crumbs are evenly moist. Press into prepared pan and transfer to freezer for 10 minutes. Bake crust for 12 minutes, then transfer to a cooling rack. Reduce oven temperature to 325°. Make cheesecake: In a small saucepan over low heat, warm butterscotch chips and heavy cream, stirring frequently, until chips are melted and mixture is smooth. Remove from heat and set aside to cool. In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat cream cheese on medium speed, scraping down bowl as necessary, until completely smooth, 3 to 4 minutes. Add sugar and salt and beat, scraping down bowl as necessary, until smooth and fluffy, 3 to 4 minutes, then add vanilla and beat 30 seconds. Add eggs, 1 at a time, beating 1 minute after each addition and scraping down bowl as necessary. Add 3/4 of the butterscotch mixture (save the rest for drizzling over the bars) and sour cream and beat on low until completely smooth and streak-free, 1 minute more. Pour cheesecake batter over cooled crust and smooth top with a spatula. Bake until set around edges and just barely jiggling in center, 35 to 40 minutes. Transfer to a cooling rack and let come to room temperature. Once completely cool, loosely cover cheesecake with plastic wrap and refrigerate until firm, 3 hours, or up to overnight. When ready to serve, heat up remaining butterscotch glaze. Cut cheesecake into squares and place on a serving tray. Pour butterscotch glaze over bars and serve.
