This Air Fryer Butternut Squash is cubed butternut squash made in the air fryer that bake perfectly crispy on the outsid¾¾e and tender and fluffy on the inside. It's a quick, healthy & easy side dish for fall and the best way to cook butternut squash! Takes less than 30 minutes and you've got perfectly tender and delicious roasted butternut squash! Naturally vegan, gluten-free, paleo and Whole30 compliant.

1 small / medium butternut squash (, about 2 pounds)
1 1/2 tablespoons avocado oil (, olive oil or any neutral oil)
3/4 teaspoon fine grain sea salt or kosher salt (, or to taste)
1/3 teaspoon freshly cracked black pepper (, or to taste)
1/2 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
Chopped fresh parsley (, for garnish)

Steps:

  • If your air fryer requires preheating, preheat to 390 F degrees.
  • Peel the butternut squash with a vegetable peeler, cut the squash down the middle, lengthwise and remove the seeds and pulp. Then cut into 1-inch cubes.
  • Place the squash cubes in a large bowl and drizzle with oil. Season with salt, black pepper, garlic powder, Italian seasoning plus any extra seasonings you like. Toss evenly to coat well.
  • Working in batches, add the squash cubes to the air fryer basket spreading them in a single layer.
  • Cook for 10 minutes, then open the air fryer basket and shake the basket or toss the squash. Air fry again for another 7-12 minutes or until the squash are tender, with some char on the edges.Transfer to a serving bowl, garnish with fresh parsley and serve warm.

500 g Butternut Squash
½ Tbsp Extra Virgin Olive Oil
1 Tsp Garlic Powder
2 Tsp Thyme
2 Tsp Parsley
Salt & Pepper

Steps:

  • Peel and slice your butternut squash into butternut squash cubes, making sure you get rid of all the seeds.
  • Remove any fleshy/soft bits of butternut squash.
  • Load your butternut squash into a bowl with the rest of the ingredients and mix well with your hands.
  • Load the butternut squash cubes into the air fryer and cook for 15 minutes at 160c/320f.
  • Shake the air fryer basket and test with a fork that your butternut squash is cooked.
  • Cook for a further 5 minutes at 180c/360f to make your butternut squash crispy like roasted butternut squash.
  • Serve.
