This creamy dish gets tangy flavor from the buttermilk.

1 1/2 pounds new potatoes (4 medium), peeled and cut into 1-inch chunks
Coarse salt and ground pepper
1/4 to 1/2 cup buttermilk
2 tablespoons butter, cut into small pieces
Snipped chives for garnish (optional)

Steps:

  • Place potatoes in a large saucepan; add enough cold water to cover by 2 inches. Bring to a boil; add 1 tablespoon salt, and cook until potatoes are very tender when pierced with the tip of a paring knife, 20 to 25 minutes.
  • Drain; place in a large bowl. Mash with a potato masher, then add buttermilk and butter. Season with salt and pepper. Mash until smooth and combined. If desired, garnish with snipped chives.

2 pounds potatoes, peeled and cut into 1-inch cubes
2 cups water
1 cup chicken or vegetable broth
6 garlic cloves, peeled
1/2 cup buttermilk
1/4 cup thinly sliced green onions
1 teaspoon salt
1/8 teaspoon pepper
Butter, melted, optional

Steps:

  • In a large saucepan, combine potatoes, water, broth and garlic. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 12-15 minutes. , Meanwhile, in a small saucepan, heat buttermilk until warm. Drain potatoes and garlic; mash with buttermilk. Stir in onions, salt and pepper. If desired, served with butter and additional green onions.

But as with alot of recipes from cookbooks, I "tweak" them according to mine and SO's own personal tastes.This recipe uses foods that aren't made " from scratch" so if you want to use freshly prepared, the cooking time will be increased.
