Dunked in buttermilk, then coated in a mixture of flour, paprika, and cayenne, these fried mushrooms have a creamy crunch that is irresistible, and also goes great with a plate of barbecue.

1 1/2 cups flour
1 tablespoon paprika
1/4 teaspoon cayenne pepper
1 cup buttermilk
8 oz small button mushrooms, scrubbed clean
Vegetable oil for frying
Kosher salt
Freshly ground black pepper

Steps:

  • In a medium bowl, whisk together flour, paprika, and cayenne pepper. Pout the buttermilk into a separate medium bowl.
  • Fill a high sided skillet, preferably cast iron, with 1 inch of vegetable oil. Heat the oil over medium heat to 375 degrees. Lin
  • Coat mushrooms in flour mixture, then dip into buttermilk. Coat again in the flour mixture and place in the oil, making sure not to crowd the pan. Fry until golden brown on one side, 2 to 3 minutes, flip and continue cooking until browned on the other side, 1 to 2 minutes more. Remove the mushrooms to wire rack placed on top of a paper towel lined baking sheet. Season with salt and pepper to taste and serve immediately.

2 cup Oyster Mushroom
1 cup Buttermilk
1 1/2 cup All-Purpose Flour
1 teaspoon Salt
1 teaspoon Ground Black Pepper
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Smoked Paprika
1 teaspoon Ground Cumin
1 tablespoon Oil

Steps:

  • Preheat air fryer to 375 degrees F (190 degrees C).
  • Clean Oyster Mushroom (2 cup), then toss together with Buttermilk (1 cup) in a large bowl. Let marinate for 15 minutes.
  • In a large bowl, combine All-Purpose Flour (1 1/2 cup), Salt (1 teaspoon), Ground Black Pepper (1 teaspoon), Garlic Powder (1 teaspoon), Onion Powder (1 teaspoon), Smoked Paprika (1 teaspoon), and Ground Cumin (1 teaspoon). Spoon mushrooms out of the buttermilk, but save the buttermilk. Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour.
  • Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, then roughly brush all sides with a little Oil (1 tablespoon) to promote browning.
  • Continue cooking 5-10 more minutes, until golden brown and crispy.
  • Serve warm with your favorite dipping sauces!
