"My Mother in Law was from Illinois. When she cooked, she could really cook! Being from the south, I had only had pork chops fried in a skillet. This is her recipe."

- "Preheat oven to 350 degrees. In a large cast iron skillet, preferably with tall sides, heat a small amount of vegetable oil over medium high heat. Add the pork chops that you have seasoned with salt and pepper. Brown on both sides for 7 minutes per side. Add water to about 3/4 the way up the sides of the pork. Cover tightly with lid and place in a 350 degree oven for about an hour. (This is called braizing) Remove meat, set aside and keep warm. Heat the skillet with the remaining water and drippings to a boil. Mix the flour and a little water in a container to make a slurry. Add to the boiling drippings and stir. When it comes back to a boil, add more water if necessary to thin gravy. Add salt and pepper to taste. Simmer 5 minutes. Serve with mashed potatoes."

“Thanksgiving here is about hunting rather than football,” said Errol Rice of the Montana Stockgrowers Association. The season for hunting big game comes to a close in the last, best place on the Thanksgiving weekend, and those who have not yet bagged a buck are known, said Dennis Konopatzke, the proprietor of Great Northern Brewing Company in Whitefish, to rush their holiday dinners in order to get out to the woods to hunt. You’ll find huckleberries on Thanksgiving tables in Montana, Mr. Konopatzke added, or the Norwegian cured fish known as lutefisk, or pork pies and stuffed pasties, all nods to the state’s history of settlers from afar. But game is the game. What follows is a recipe honed over the years by the members of the Rocky Mountain Elk Foundation for a marinade that works on wild venison perfectly and most other proteins as well. Broil some steaks and pair the result with traditional Thanksgiving side dishes.

- Combine all ingredients except venison in a large bowl. Submerge venison in the marinade, cover with plastic wrap and refrigerate at least 8 hours and up to 12 hours.
- Heat broiler, stovetop grill pan or grill. Remove venison from marinade and season with salt and pepper. Working in batches if necessary, place steaks under the broiler or on the grilling surface and cook, flipping once, until medium-rare, 4 to 5 minutes per side. Allow venison to rest for 5 minutes before serving.

- In a large bowl, whisk together soy sauce, olive oil, brown sugar, bourbon, mustard, Cajun seasoning, garlic, thyme, and red pepper flakes. Pour out about ? of mixture to use for glaze later. Toss steak in mixture and let marinate for 20 minutes, or up to 4 hours. (If marinating for more than 20 minutes, cover bowl with plastic wrap and refrigerate.) Heat grill or grill pan to high. Remove steak from marinade and season both sides with salt and pepper. Grill until charred on bottom, about 10 minutes. Flip steak, then lower grill to medium-high and cook for another 8 to 10 minutes. (A meat thermometer inserted into the thickest part of the meat should register around 130°.) Remove from grill and let rest on cutting board before slicing against the grain. Brush glaze over steak and garnish with parsley, if using.
