Buttercream Truffles Recipe - Food Fanatic image

Buttercream truffles are sweet homemade chocolates anyone could love. They make a lovely gift too!

3/4 cup unsalted butter, softened
2 teaspoons pure vanilla extract
4 cups powdered sugar
2-3 tablespoons milk
12 ounces ghirardelli chocolate melting wafers, (dark chocolate)
sprinkles, for garnish

Steps:

  • In a large mixing bowl, beat butter, vanilla and powdered sugar until smooth. Add in milk and beat an additional 2-3 minutes until fluffy. Cover and refrigerate for about an hour (or more!). Scoop 1 tablespoon balls onto a parchment paper lined baking sheet. Freeze balls for about 30 minutes. Once firm, remove balls from freezer, and use your fingertips to shape smooth. Melt chocolate wafers according to package directions. Using a toothpick, dip each truffle into the melted chocolate, tapping on the side of the bowl to remove the excess. Drop onto parchment paper and add sprinkles immediately. Repeat for remaining truffles.

This is a super easy, very decadent buttercream recipe that I developed to suit the chocoholic tastes of my family. If you are looking for a frosting with a rich chocolate flavor minus the cloyingly sweet taste of confectioners sugar--this is it! This recipe makes a very generous amount of frosting--I use the extra on fresh strawberries or icecream.

1 cup butter, softened
3/4 cup heavy whipping cream
3 cups confectioners' sugar
1 tablespoon vanilla
1 cup cocoa powder
1/2 teaspoon instant espresso granules

Steps:

  • cream butter, sugar, and whipping cream with a hand mixer.
  • add cocoa, vanilla, and espresso granules and beat until smooth and light.
  • If the frosting is too dry, add more cream in small increments at a time to get desired consistency.
